Knock-Off Girl Scouts' Samoas Cookies

I have had this recipe in my bookmarks for a while and haven't worked up the courage to make them yet.  But I was looking for something a bit more challenging than just your average cookie, so I decided to make these.  I had never made a shortbread type of cookies before and I'll be honest, I had some really frustrating moments.  But overall, the result was fantastic.  I'm pretty proud of my first time at making these, because the next time I attempt these, they will be even better!

Cookie
1 c. butter, softened
1/2 c. sugar (I used Splenda)
2 c. flour
1/4 tsp. baking powder
1/2 tsp. salt
1/2 tsp. vanilla
up to 2 Tbl. milk

Topping
3 c. shredded coconut (sweetened or unsweetened, I used sweetened)
12 oz. chewy caramels
1/4 tsp. salt
3 Tbl. milk
8 oz. dark or semisweet chocolate

To make the cookies:
1. Preheat oven to 350. 
2. Cream together butter and sugar; mix in flour, baking powder & salt at a low speed.
3. Add vanilla.  Add in milk in 1/2 Tbl. increments--use enough needed to make the dough come together without being sticky.
4. Refrigerate dough (mine was SO STICKY), then roll dough out in a few batches (I did 4) in between pieces of flour and wax paper.  Use a cookie cutter (or a glass) to cut out rounds.  You might want to add flour in order to help dough roll out better, it can be pretty sticky. 
5. Place cut out rounds on greased baking sheet and make a hole in the center.  Reroll dough and use until all dough has been used up.
6.  Bake cookies for 12-15 minutes, until bottoms are very lightly golden brown around edges.
7.  Allow cookies to cool completely

To make the topping:
1. Preheat oven to 300.  Spread coconut evenly on a rimmed baking sheet lined with foil and toast for 20 minutes.  Stir every 5 minutes, until coconut is golden.  It might seem like that's a lot of coconut, but trust me on this.  You'll want it.  Watch the coconut carefully the last 8-5 minutes.  Let cool.
2. Unwrap caramels and microwave with milk and salt.  Cook on high 3-4 minutes, stopping to stir.  When smooth and melted, stir in toasted coconut.  And try not to eat it all, because it's very yummy.
3.  Spread topping on cooled cookies, using 1-3 tsp. per cookie. 
4.  After topping has set up, melt chocolate in a small bowl.  Transfer chocolate to piping bag or a large ziplock bag with the corner snipped off and drizzle chocolate onto cookies. 
*the original recipe says to dip cookies 1/2 way and THEN to drizzle, but my cookies were a bit too fragile for this to work.
**also the next time I make these, I think I will quickly dip the cookies into a thinner chocolate mixture before adding the topping, so it will stick to the cookie better.

Makes 3-4 1/2 dozen cookies--I personally got 41 from this batch.

Blueberry Coconut Macadamia Muffins

Goodness gracious, are these muffins delicious!  They're packed with lots of different flavors that blend very nicely into a moist, crunchy but yet soft, delicious muffin.  I found the recipe on EatingWell.com, through a google search looking for healthy but yet delicious brunch-type items.  I gave this recipe a try last night and on all accounts, it is a fabulous recipe.  I didn't have any problems with the batter, not baking time.  The only problem I had was waiting the suggested time after they came out of the oven.  I still burned my mouth a little because I couldn't wait, but it was definitely worth it!

Topping
1/4 c. unsweetened coconut
2 Tbl. flour
2 Tbl. brown sugar
2 Tbl. chopped macadamia nuts
1 Tbl. oil

Muffin
3/4 c. flour
1/2 c. brown sugar
3 Tbl. chopped macadamia nuts
1 Tbl. canola oil
1 c. whole-wheat flour
1 tsp. baking powder
1/4 tsp. baking soda
1/8 tsp. salt
1/2 tsp. cinnamon
1 large egg
1 large egg white
3/4 c. nonfat buttermilk
2 Tbl. butter, melted
1/2 tsp. coconut or vanilla extract
1 1/2 c. fresh or frozen (though not thawed) blueberries

1.  Preheat oven to 375 degrees.  Coat a 12-cup muffin pan with cooking spray.  I used baking liner cups and sprayed them with spray.
2.  Combine all topping ingredients and set aside.
3.  Mix together flours, baking soda, baking powder, salt and cinnamon in a medium bowl.
4.  Whisk brown sugar, oil, egg, egg white, buttermilk and extract in a (different) medium bowl until well combined.
5.  Make a well in the center of the dry ingredients and pour in the wet ingredients and stir until just combined.
6.  Add blueberries and remaining macadamia nuts, stir just to combine.
7.  Divide batter among the muffin cups (about 1/4 c. of batter per muffin).  Sprinkle and gently press the topping on the tops of the muffins (about 1 tsp. per muffin).
8.  Bake muffins about 20 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
9.  Let cool in the pan for 10 minutes, then remove from pan and let cool on a wire rack at least 5 minutes before serving.

Healthier Carrot Cake



This cake is awesome.  I have made it twice now and think I might have the (sheet cake) recipe perfected.  I may eventually try cupcakes and a full size round cake in the future.
The reason I love this cake is because I’m pretty proud of my skills in the kitchen.  The last few months have been a fun challenge for me, as I’ve tried to make our meals healthier and better for us.  We aren’t doing anything too hardcore, like moving straight into a vegan diet or cutting out sugar or anything like that.  We are just gradually trying to move into eating better, more organic and real food.  In the past when I’ve tried to cut something cold turkey, it doesn’t really stick with me and I give up and feel defeated.  However, with these gradually changes with substituting better and healthier ingredients to cut calories and fat but not compromising taste, it’s been pretty successful!  And I think I’ll be able to keep this up and eventually become a *True Master of the Kitchen*, which is a term I just made up.

My logic to this cake was to make a better, healthier cake so that I could have a more indulgent cream cheese frosting.  There are some things in this world that I can’t say no to and one of them is cream cheese frosting.  I didn’t want to make a ‘skinny’ version of the frosting because I wanted to make sure it tasted good.  I think it’s a fair compromise!

Ok, this recipe.  I can’t even remember where I found this recipe, but here’s the original one that I adapted can be found. It’s not a very involved recipe, but I like making sure that when I bake, everything is done accurately and well.  For this recipe, I substituted unsweetened, natural applesauce for the oil and splenda sweetener for the sugar.  I might try it with a combo of white and whole-wheat flour…we’ll see.


2 c. flour
2 tsp. cinnamon
2 tsp. baking powder
1 tsp. baking soda
4 eggs (room temperature)
1 tsp. vanilla
1 c. unsweetened, natural applesauce
1 c. Splenda sweetener substitute
4 c. grated carrots (I used 1 small bag of pre-grated carrots and chopped them up so they’d be smaller)

1 batch cream cheese frosting:
            ¼ c. unsalted butter (room temperature)
            8 oz. cream cheese (room temperature)
            1 tsp. vanilla
            3 c. powdered sugar

1.       Preheat oven to 350 degrees, grease a 9 x 13” baking dish.
2.      Whisk together dry ingredients; beat eggs in with vanilla and set both aside.
3.      In a large bowl, beat together the applesauce and splenda in a mixer until they reach a uniform consistency.  With mixer on low, add in 1/3 of the flour.  Beat until incorporated.
4.      Add in 1/3 of the eggs mixture and beat until well incorporated.  Add another 1/3 of the flour, beat.  Add remainder of the eggs and beat well.
5.      Add last of the flour.  Stop mixing once last of the flour is barely incorporated. 
6.      Fold the carrots into the batter with a spatula, until no more dry flour remains and carrots are well mixed in.
7.      Pour batter into greased baking dish and tap against the counter a few times to get any air bubbles out. 
8.      Bake 40 – 45 minutes.  Let cake cool completely before frosting.
9.      For frosting, beat together butter and cream cheese.  Once they are well mixed, add in vanilla and powered sugar, slowly. 
10.  Beat until creamy, scraping down the sides of the bowl.

Crispy Oven-Fried Tilapia

I have been trying to have us eat fish more often.  But I'm not great at seafood dishes, but I hope to get better someday.  I was pursuing my cookbooks and came along this one from Better Homes & Garden.  It sounded delicious & I was super pleased with the result.  I will definitely make this more often, it's simple, has plenty of flavor & crunch.

4 tilapia fillets
1/4 c. milk
1/3 c. flour
1/2 - 2/3 c. regular Panko crumbs
1/2 c. grated Parmesan cheese
1/4 tsp. onion powder
1/4 tsp. Old Bay garlic & herb seasoning
1/4 tsp. pepper
1/2 tsp. salt
3-4 Tbl. butter, melted

1.  Place milk in a shallow dish, flour in another shallow dish.  In a third dish, combine panko crumbs, cheese & spices.  Add melted butter to panko-cheese-spices dish & mix until well combined.
2.  Dip fish in milk; coat with flour.
3.  Dip again in milk, then in crumb mixture to coat all sides.  Place fish on a greased baking sheet.
4.  Bake, uncovered in a 450 degree oven for 4 - 6 minutes per side until fish begins to flake when tested.

Fudgy Chocolate Brownies

I have been craving brownies, and decided to make some for tonight, when we go see a movie with friends.  But I wasn't really into some of my family or other recipes, and went on the hunt for a fairly simple brownie recipe with ingredients I already had.  I found this one at simplyrecipes.com, and holy cow it is amazing!  The brownies are thick, dense and so full of chocolate!  This might be my go-to recipe for brownies from now on!

*Update: these are seriously amazing.  They are dense, moist and basically taste like fudge.  They were a huge hit!  Everyone told me they were the best brownies they ever had!

10 Tbl. (1 1/4 sticks) unsalted butter
1 1/4 c. sugar
3/4 c. + 2 Tbl. unsweetended cocoa powder
1/4 tsp. salt
1 tsp. almond extract
1 tsp. vanilla extract
2 large eggs
1/2. flour

1.  Preheat oven to 325 degrees, with rack in the lower third of the oven.  Line the bottom and sides of an 8" square baking pan with foil or parchment paper, spray with nonstick spray.
2.  Cut butter into pieces and place in a medium heatproof bowl.  Set bowl in a wide skillet of barely simmering water.  Stir butter until it has mostly melted, then add cocoa, sugar and salt to bowl.  Stir until mixture is smooth and well-combined.  Remove from skillet and set aside until mixture is only warm, not hot.
3.  Stir in almond and vanilla extract.  Add eggs one at a time, stirring with a wooden spoon.
4.  Stir in flour, until flour is no longer visible, then beat for 40 strokes with wooden spoon.  Spread batter evenly in prepared pan.
5.  Bake for 25 - 30 minutes until a toothpick inserted comes out only slightly moist with batter.  Let brownies cool, lift out of pan and cut into pieces.

Oreo Cheesecake Cookies

I found this recipe and let's just say they are amazing.  I love cream cheese, Oreos and the combination of the two.  They were pretty easy to make, as long as you can restrain from eating the Oreos in the meantime. I made a double batch so I could send some to my family to try, so here is that recipe with my slight alterations.

1 c. (unsalted) butter, softened (I only had salted, worked fine)
8 oz. cream cheese, softened (used low fat)
2 c. sugar
2 tsp. vanilla
2 c. flour
1 c. mini chocolate chips
2 c. Oreo cookie crumbs (about 16 cookies, had a little bit left over)

1.  Preheat oven to 375 degrees, line baking sheet with parchment paper and set aside.  I didn't have parchment paper, but used my air-bake cookie sheets or whatever and it worked just fine.
2.  Cream together butter and cream cheese on medium speed until smooth and well-combined.
3.  Add in sugar and vanilla; mix until ingredients are well-combined.  Add the flour and mix on low until it is incorporated.
4.  Stir in the mini chocolate chips with a spatula (I just set the mixer to low and ran it a few times).
5.  Roll dough into 1/2 - 1 inch balls and roll in the cookie crumbs.
6.  Bake 12 - 15 minutes, or until tops are slightly puffy.
7.  Let cool on pan for about 2 minutes before moving to a wire rack to cool.

This made about 4 dozen decently sized cookies.

Creamy Eggs

This is our traditional Easter morning breakfast.  It is hard-boiled eggs in a thick cream sauce poured over toast.  We also have kielbasa on the side.  My dad even sings (he is not known for his singing), 'We're creamed eggs on toast! Mom & Dad were Easter Eggs!!' as he ladles up the creamy eggs for us.  It's a great tradition, and I was nervous when I made it for Zak the first time, but he was sold from the first bite.  I made this for breakfast this weekend, because my brother is visiting and we didn't get to make this for Easter, as we were visiting Zak's grandparents.  I was unsure of how many eggs to make, if I should halve the sauce recipe or what, but what I made turned out to be the right amount for the three of us to stuff ourselves with!  It was delicious and worth the wait!

6 hard-boiled eggs
1 cube + 1 Tbl. butter
6 Tbl. flour
3 c. milk
salt & pepper
7 pieces of toast

1.  Place eggs in a small saucepan, and add enough cold water to cover them.  Bring to a rolling boil, then remove from heat, cover and let sit for 15 minutes.  Drain and add to cold water with ice cubes.
2.  Heat butter on medium heat in microwave until melted.
3.  Whisk in flour, cook on medium heat 1 1/2 - 2 minutes, until bubbling almost reaches the top of the bowl.
4.  Slowly add in milk.  Cook on medium heat for 3 minutes.  Stir, cook for 2 minutes.  Keep repeating until sauce has thickened.
5.  Peel and cut up eggs, and add to thickened sauce.  Sprinkle in salt & pepper and combine.  
6.  Serve over toast and enjoy!

Crockpot Beef Stew

This recipe was pretty good, it smelled so good in the crockpot all day!  It was great with some thick slices of sourdough bread yum!

2 lb. stew beef
3 - 4 large potatoes, peeled & chopped
4 large carrots, peeled and cut into 1/2 inch pieces
1/4 c. flour
1/3 c. soy sauce
1 1/2 tsp. salt
1/2 tsp. pepper
1 tsp. paprika
1 large onion, sliced
1 can (8 oz.) tomato sauce
1 c. beef broth

1.  Layer potatoes on the bottom of the crockpot.  Add carrots and stew meat.
2.  Sprinkle meat with salt, pepper, paprika, flour and soy sauce.
3.  Layer onions on top of meat.
4.  Combine tomato sauce and beef broth and pour over meat and vegetables.
5. Cook on low for 7 - 8 hours (or on high for 4 - 5).

so thick and hearty!

Fail-Proof Pizza Dough

We love making homemade pizza; we used to make it almost every week when we were engaged/dating/in Rexburg.  We don't make it as often now, but it's always fun.  We have almost always used Zak's mom's recipe (they have a Pizza Friday tradition since forever), which is awesome and we love.  But I saw this recipe online and thought I'd like to give it a try.  The gal talked about how the crust was chewier, thinner and like restaurant pizza, and the only major difference was using bread flour vs. regular flour.  Zak was in charge of the dough and when I came home for work, we made two pizzas: one just cheese, and one with pineapple, tomatoes and basil.  It was delicious.  I really liked this recipe, the crust was awesome!  Zak liked it too, but he naturally loves his mom's recipe.  So I think we'll use this one from time to time, depending on our stock of bread or regular flour.  

Crust
1 c. warm water
2 1/4 tsp. active dry yeast
1 Tbl. honey (or sugar)
2 tsp. salt
2 Tbl. olive or canola oil
3 c. bread flour

Sauce
6 oz. tomato sauce
6 oz. tomato paste
1/2 tsp. salt
1/2 tsp. sugar
1/2 tsp. oregano
1/2 tsp. basil
1/2 tsp. pepper
1/2 tsp. garlic
1/2 tsp. minced onion


~4 c. cheese
toppings

1.  In a large mixing bowl, stir together yeast and honey (or sugar) into warm water.  Let sit for 5 - 10 minutes or until bubbles form and mixture starts to foam.
2.  Pour in salt, oil and half the flour and mix on low.
3.  Once that flour is incorporated, start adding rest of flour slowly until dough is slightly tacky, but doesn't stick to hands when you touch it.
4.  Turn the mixer to medium - high to high speed, set a timer for 6 minutes and walk away.
5.  Lightly grease bowl and dough, cover with plastic wrap and let rise 1 - 2 hours.
6.  Once dough has doubled in size, punch down, separate into two pieces and roll into circle.  Preheat oven to 500 degrees.
7.  Mix sauce ingredients, adding other spices to taste.
8.  Add sauce, cheese and toppings to pizza.
9.  Cook pizza about 8 - 10 minutes, until crust has turned a beautiful golden brown color.

Homemade Bagels

I love bagels, holy cow.  We have an amazing bagel sandwich shop in downtown and it's so hard not to go there all the time.  I've seen a few bagel recipes online and was always discouraged, because they look so complicated.  So when I found this recipe, I was a bit skeptical, because it seemed too easy and that maybe it wouldn't taste like real bagels.  But I was wrong!  This recipe was simple, fun and so freaking tasty!  I think I will make these often, and probably not buy bagels that much anymore.  These are so good.  I got to work on forming them a little bit better, but for my first try, I was impressed with how well they turned out!  We ended up with 4 plain, 2 sesame & 2 cheese.  Delicious!

4 c. bread flour
1 Tbl. sugar
1 1/2 tsp. salt
1 Tbl. oil
2 tsp. instant yeast
1 1/4 - 1 1/2 c. warm water

1.  Mix all ingredients in a large bowl.  Don't worry about proofing the yeast, just stir all ingredients until it's well incorporated.
2.  Plop the dough on the table, add some flour and kneed for about ten minutes.  Dough should be firm and smooth.
3.  Cut into 8 equal pieces and form in balls, let rest for 20 minutes.
4.  Roll out a dough ball with your hands until it is a little bit longer than the width of your two hands.  Form into a circle--the website had some technique that I couldn't quite grasp.  I just eyeballed it and formed circles that looked uniform enough.
5.  Let rolled bagels rest for 20 minutes; bring big pot of water to a boil, spray cooking sheet with Pam or something & preheat oven to 425 degrees.
6.  Boil as 3 - 4 bagels at a time, one minute per side.  Once they've been boiled on each side, place on oiled sheet.  If you want to add poppy or sesame seeds, or even cheese, simply have a clean plate ready with the toppings and carefully (bagel will be hot) place on top of the toppings.
7.  Once all bagels are done and toppings have been added, bake for 10 minutes.  Flip bagels and cook another 10 minutes.
8.  Let cool 15  - 20 minutes (however long you can stand it) and then enjoy!

Baked Coconut Chicken with Sweet & Spicy Apricot Sauce

I follow this cute blog, Six Sisters' Stuff and they have some good recipes that I've tried in the past few months.  And this one is another new recipe that we are fans of!  We really enjoyed it, the sauce was a great compliment to the chicken.  I decided on using an apricot-pineapple blend instead of just plain apricot, and it was fantastic. Next time I will cook the chicken at a lower temperature, because it didn't turn out as beautifully golden as I wanted; some of the coconut got a little burned.  I ended up not the full amount of the ingredients, so I'll copy what I used here.

Chicken
1 1/2 lb. chicken, cut into strips (about 25 pieces is what I got)
2 eggs
2-3 Tbl. flour
3/4 c. sweetened coconut flakes
3/4 c. panko bread crumbs
1 1/2 tsp. garlic powder
3/4 tsp. salt
3/4 tsp. curry powder
1/4 tsp. onion powder
1/8 tsp. cayenne pepper (optional, didn't use this time)

Sauce
1/2 c. apricot-pineapple (or just apricot) preserves
1 Tbl. unseasoned rice vinegar
3/4 tsp. red pepper flakes

1.  Preheat oven to 425 (original recipe says 450) degrees.  Line baking pan with foil, spray with nonstick spray.
2.  Combine coconut flakes, panko bread crumbs and spices in a medium-sized bowl.
3.  Place flour in one shallow bowl; beat the eggs and place in a different shallow bowl.
4.  Working with one chicken tender/piece, dip in flour, than egg & completely cover with coconut-panko mix.
5.  Once all pieces have been coated and placed on the baking pan, cook for about 15 - 20 minutes, until golden brown.
6.  Combine all the sauce ingredients, place in dipping bowls.

Irish Chocolate Guinness Cake

For St. Patrick's Day, in addition to corned beef, our friends requested I make this cake.  I agreed because I really love making cakes and it looks like it'd be a delicious, moist cake.  Plus I can't say no to a recipe with cream cheese frosting.  I'm a sucker for the stuff.  Anyways, this cake is delicious.  It's very thick, moist and easy to eat.  It's so very good, so good that Zak didn't want me to give any away to our friends!

Cake
1 c. Guinness
1/2 c. butter, cubed
2 c. sugar
3/4 c. cocoa
2 eggs
2/3 c. sour cream
3 tsp. vanilla
2 c. flour
1 1/2 tsp. baking soda

Frosting
8 oz. cream cheese, softened
1 1/2 c. powdered sugar
1/2 c. heavy whipping cream

1.  Grease a 9" spring-form pan, then line with parchment paper.  Set aside; set oven to 350 degrees.
2.  Melt butter in a small saucepan.  Once butter is mostly melted, add beer and stir until butter has completely melted.  Remove from heat.
3.  In a large bowl, combine sugar and cocoa.  Add in beer mixture and stir until smooth.
4.  In a small bowl, beat eggs.  Add vanilla and sour cream, mix well.  Add to large bowl with beer and chocolate.
5.  Mix in flour and baking soda until completely smooth.  Pour in prepared pan.
6.  Bake for 40 - 45 minutes, until toothpick is inserted in middle and comes out clean.
7.  Cool completely on wire rack, still in pan.  Once cake has cooled, remove from pan and place on cake plate.
8.  Beat cream cheese until fluffy.  Slowly add in powdered sugar and heavy cream and beat until smooth.
9.  Frost cake and refrigerate.  Bring to room temperature about half an hour before serving.  Store leftovers in fridge.

Slow Cooker Cashew Chicken

I made this recipe last night and it was a pretty simple recipe, and it smelled so good while it was cooking!  In the future, I think I'll add a little bit of salt to the chicken, because it needed just a touch.  But overall, a great recipe and will be rotated into our food menu.

2 lb. boneless, skinless chicken thigh or breast tenders (I used about 26 oz. and cut them up so there were 18 pieces)
1/4. flour
1/2 tsp. black pepper
1 Tbl. canola oil
1/4 c. soy sauce
2 Tbl. rice vinegar
2 Tbl. ketchup
1 Tbl. brown sugar
1 garlic clove, minced
1/2 tsp. fresh ginger, grated
1/4 tsp. red pepper flakes
1/2 c. cashews

1.  Combine flour and pepper in resealable ziplock bag.  Add chicken and shake to coat.
2.  Heat oil in skillet over medium-high heat.  Brown chicken pieces about 2 minutes on each side.  Place in slow cooker.
3.  Combine soy sauce, vinegar, ketchup, sugar, garlic, ginger & pepper flakes in a small bowl; pour oven chicken.
4.  Cook on low for 3 - 4 hours, turning chicken over once, after 2 hours.
5.  Add cashews and stir; serve over rice.

Crispy Panko Pork Chops

This recipe was delicious!  And so simple!  I used two thick pork chops this, but I think it'd be just fine with thinner chops--it was a lot of meat to eat.  The spices worked so well together and I love panko crumbs, which made the chops so crispy, but still juicy and tender in the inside.  This worked perfectly with potatoes and a vegetable dish on the side.  Hooray for delicious, simple dinners in under 40 minutes!

3 Tbl. canola/vegetable oil
2 thick bone-in pork chops (about 2 lbs.), I used boneless
1/2 c. panko crumbs
2 Tbl. grated Parmesan cheese
1 heaping Tbl. minced Italian parsley
1/4 c. flour
2 eggs, lightly beaten
salt & pepper

1.  Preheat oven to 375 degrees.  Season pork chops with salt & pepper and set aside.
2.  Mix together panko crumbs, Parmesan, parsley and 1/2 tsp. salt.
3.  Place flour in one shallow bowl, the eggs in another bowl, and panko mixture in last shallow bowl.
4.  Heat 3 Tbl. of oil over medium-high heat.  Dredge pork chops first in flour, than the eggs, and lastly the panko mixture, making sure to coat meat evenly.
5.  Add pork chops to pan and cook until golden brown & crispy on each side, about 2 minutes per side.
6.  Remove pork chops from pan and place in a baking sheet.  Cook in the oven, uncovered, for about 15 - 25 minutes.  Allow them to rest at least 5 - 10 minutes before servings.

Homemade Soft Pretzels

We tried this recipe tonight and it is delicious.  It was pretty simple, with Zak helping me.  He made the pretzels into pretzel-shaped and I boiled them and put on the finishing touches.  We're already thinking of different variations to try -- sweet, with cheese, garlic salt.  I used Alton Brown's recipe and don't really have any major modifications or tips to add.  Except to cook the pretzels for less time.  But anyways, these are delicious and easy to eat!

1 1/2 c. warm (110 - 115 degrees) water
1 Tbl. sugar
2 tsp. salt
1 package active dry yeast (2 1/4 tsp.)
approximately 4 1/2 c. (22 oz.) flour
1/2 stick butter (2 oz.), melted
10 c. water
2/3 c. baking soda
1 large egg yolk beaten w/1 Tbl. water
pretzel or sea salt
Crisco or Pam spray

1.  Combine warm water, sugar and salt in stand mixer bowl, with yeast sprinkled on top.  Let sit for 5 minutes or until mixture begins to foam.
2.  Add the flour and butter and mix on low speed until well combined.  Change to medium speed until dough is smooth and pulls away from the side of the bowl, about 4 - 5 minutes.
3.  Remove dough from bowl and oil/spray it well and return dough to bowl.  Cover with plastic wrap and let sit in a warm place for about an hour or until dough has doubled in size.
4.  Preheat oven to 450 degrees.  Line 2 pans with parchment paper and lightly spray/brush with oil.  Set aside.
5.  Bring the 10 cups of water and baking soda to a rolling boil in a large pan.
6.  Turn dough out onto a slightly oiled surface and divide into 8 equal pieces.  Roll out each piece of dough into a long, 24-inch rope.  Make a U-shape, holding ends of the rope and cross them over each other and press onto bottom of the U to form a pretzel shape.  Make sure the ends are pinched onto the bottom of the pretzel, so they stay put.
7.  Place one pretzel at a time into the boiling water for 30 seconds.  Remove with a large flat spatula.  Return to baking pan and brush the top of each pretzel with the beaten egg yolk and water mixture, then sprinkle with salt.
8.  Bake until golden brown in color, about 10 - 12 minutes.  Let cool on a rack for 5 minutes before serving.

Individual Chicken Pot Pies


I got this individual pie pan for my birthday and was super excited about it; Zak loves chicken pot pie and I could just imagine making cute little pot pies for him!  So this afternoon I went for it.  Overall, it went really well, except for my first set of pies.  I didn't realize that I needed to put the little metal plates on the bottom, because the box wasn't specific enough and....it went everywhere.  But I at least had the forethought to put the pan onto a baking sheet in case it leaked.  But the second pan of pies turned out just perfect!  So I'm jazzed about this pan and it's going to be awesome for summer fruit pies!  

The recipe I have for chicken pot pie is from my mother-in-law; I made it for Zak for the first time the night we got engaged.  I've made it a few times since then, but haven't really measured the amounts in the recipe.  Since I've been trying to be good about what I eat, I went hard core today and measured everything and wrote it all down, but now I have a recipe with actual amounts for the ingredients.  The only note is, when using the pie pan, I used 4 pie crusts; when I make just a pie in a pie plate, I only use 2 crusts.  Anyways, enough with the background and onto the recipe!

4 pie crusts (for individual pan, 2 for normal pie pan)
3 medium potatoes, peeled & cubed
2 medium carrots, peeled & cut in half-circles (about 3/4 c.)
1/2 onion (about 3/4 c.)
2/3 c. frozen peas
1 stalk celery, diced (1/3 c.)
1/4 tsp. thyme
1 tsp. garlic powder
2 boneless, skinless chicken breasts, cut into bite-sized cubes (came out to about 9 oz. cooked)
3 Tbl. flour
1/2 c. milk
1 c. shredded cheese
3 - 4 chicken bouillon cubes
3 - 4 c. water
salt & pepper

1.  Preheat oven to 375 degrees.
2.  Prepare all vegetables and place in a large stock pot.  Measure water--enough to cover the vegetables.  I usually end up with 3 cups.  Drop in corresponding number of bouillon cubes.
3.  Add thyme, garlic powder, and shakes of salt & pepper; cook on medium to medium-high until vegetables are tender.
4.  In another pot, boil water and add chicken; cook.
5.  Mix together milk and flour in small bowl, add to potato mix.  Cook until thick, more flour may be needed.
6.  Add cooked chicken and cheese, stir until cheese has melted.  
7.  Pour mix into pie crusts and place top layer on top, make sure to cut vents.
8.  Bake 20 minutes if using individual pie pans, or about 30 - 40 minutes if using normal pie plate -- until crust has started to turn golden brown.

Usually when I make it with a normal pie plate, there is leftover mixture.  It's good to eat plain, but I imagine it's great with biscuits or thick bread.  With the individual pan, I had plenty to make 10 little pies, hooray!

Carmelitas

Warning: you will want to consume the entire pan of these, try your best not to.  These are delicious.  And are way too easy to eat.  They are called 'carmelitas' and I found them on a cute blog, and decided to give them a try, with the idea that we'd give some away.  We did give some away, just not as many as I had hoped.  Because we ate most of them.  They are just amazing, oh man.  They're a combination of cookie and bar, and are very rich, but kind of addicting.  They're also pretty simple to make, they just require a lot of time to cool.  I didn't get more than a few pictures, because I was too busy eating them.  Enjoy!

32 caramel squares, unwrapped
1/2 c. heavy cream
3/4 c. butter, melted
3/4 c. packed brown sugar
1 c. flour
1 c. oats
1 tsp. baking soda
6 oz. semi-sweet chocolate chips

1.  Preheat oven to 350 degrees.
2.  Combine caramels and cream over low heat until completely melted and smooth.  Set aside.
3.  In a medium bowl, combine flour, brown sugar, oats, baking soda and butter.  Pat half of the mixture in an 8x8" pan.  Bake for 10 minutes.
4.  Remove pan and sprinkle chocolate chips over baked crust.  Pour caramel mixture over chocolate chips; sprinkle remaining oats mixture on top of caramel layer.
5.  Return to oven and bake additional 15 - 20 minutes, or until sides are slightly browned.  Remove and let cool completely before cutting.  To make a 9x13" pan, simply double ingredients.

Sweet Corn Tamale Cakes [Cheesecake Factory]

Oh my goodness I love this dish.  It's from the Cheesecake Factory and is my favorite appetizer of all-time.  Normally, I wouldn't go for all these different salsas and flavors, but combined, they are amazing.  I love the corn cakes the most.  My mom made these for us when we were in California, and they were better than the restaurant's!  I've had my eye on this recipe before, but never made it because I was unsure of how it'd go, especially without a food processor.  But I talked to my mom about it, and she convinced me I could handle it.  It's a bit more of an involved recipe, but well worth it.  My cakes turned out a little crispy and not totally one solid piece, but they still tasted delicious.  I made five cakes in all, even though it's supposed to make 4. Whatever, we were happy to have a bonus one!  They kept find in the fridge overnight, so today the leftovers were still wonderful.  Zak said I should make mini ones to serve with these; he loves them that much!  Another recipe success!

Salsa Verde
2 tomatillos, with paper removed and chopped
4 oz. mild green chilies
1 green onion bunch, chopped
2 Tbl. fresh cilantro
1 1/4 tsp. sugar
1/4 tsp. ground cumin
1/4 tsp. salt
pinch of pepper

Tomato Salsa
1 medium tomato, diced
1 Tbl. Spanish onion, minced (I used red onion)
1 Tbl. fresh cilantro
1/2 - 1/4 tsp. lime juice
1/2 small jalapeno, minced
dash of salt & pepper

After I lightly blended the ingredients


Southwestern Sauce
1/2 c. mayo
1 tsp. white vinegar
1 tsp. water
3/4 tsp. sugar
1/2 tsp. chili powder
1/4 tsp. paprika
1/8 tsp. cayenne pepper
1/8 tsp. onion powder
dashes of: salt, pepper & garlic powder

Seriously, using a squirt bottle helped big time

Tamale Cakes
1 1/2 c. frozen corn (keep 1/2 c. whole & separate)
1/2 c. butter, softened
3 Tbl. sugar
1/8 tsp. salt
1/2 c. masa harina (corn flour)
2 Tbl. white flour

Garnish
1/4 c. sour cream (4 Tbl.)
1/2 - 1 avocado, chopped
2 Tbl. fresh cilantro, chopped (I didn't use)

1.  Prepare the salsa verde by combining all ingredients in a food processor or use a hand blender.  Cover and chill.
2.  Prepare tomato salsa by combining all ingreidents in a small bowl.  I used my hand blender briefly to slightly mix the ingredients into a mushier? state.  I wanted it to be a bit more spreadable and in smaller pieces, if that makes sense.
3.  Prepare southwestern sauce by combining all ingredients in a small bowl.  Transfer to a squirt bottle, as it will make life much easier when assembling!  Chill.
4.  Preheat oven to 400 degrees.
5.  For the tamale cakes, coarsely puree 1 c. of the corn in a food processor.  Using a hand blender was kind of a disaster, and took awhile.  Next time I plan on using a blender, if I don't have a food processor before then.
6.  Once pureed, combine with softened butter, sugar and salt.  Blend well with electric mixer until smooth.
7.  Add masa and white flour and blend well.
8.  Mix in the remaining 1/2 c. of corn by hand.
9.  Measure 1/2 c. and form into 3-inch patties.  Using slightly wet hands helped a lot to form the patties.  I got 5 patties out of the mixture.
10.  Arrange on a baking sheet and bake 20 - 25 minutes, or until cakes are browned on the bottom.
11. Flip cakes with a spatula and bake for an additional 5 - 7 minutes or until slightly browned.
12.  To serve, spoon the salsa verde onto a platter.  Coat entire plate with about 1/4 inch of salsa.
13.  Arrange tamale cakes on top of the salsa verde.
14.  Add spoonful of tomato salsa on top of each cake, with a dollop of sour cream on top.
15.  Arrange avocado pieces on cake and drizzle both ways with southwestern sauce.
