Knock-Off Girl Scouts' Samoas Cookies

I have had this recipe in my bookmarks for a while and haven't worked up the courage to make them yet.  But I was looking for something a bit more challenging than just your average cookie, so I decided to make these.  I had never made a shortbread type of cookies before and I'll be honest, I had some really frustrating moments.  But overall, the result was fantastic.  I'm pretty proud of my first time at making these, because the next time I attempt these, they will be even better!

Cookie
1 c. butter, softened
1/2 c. sugar (I used Splenda)
2 c. flour
1/4 tsp. baking powder
1/2 tsp. salt
1/2 tsp. vanilla
up to 2 Tbl. milk

Topping
3 c. shredded coconut (sweetened or unsweetened, I used sweetened)
12 oz. chewy caramels
1/4 tsp. salt
3 Tbl. milk
8 oz. dark or semisweet chocolate

To make the cookies:
1. Preheat oven to 350. 
2. Cream together butter and sugar; mix in flour, baking powder & salt at a low speed.
3. Add vanilla.  Add in milk in 1/2 Tbl. increments--use enough needed to make the dough come together without being sticky.
4. Refrigerate dough (mine was SO STICKY), then roll dough out in a few batches (I did 4) in between pieces of flour and wax paper.  Use a cookie cutter (or a glass) to cut out rounds.  You might want to add flour in order to help dough roll out better, it can be pretty sticky. 
5. Place cut out rounds on greased baking sheet and make a hole in the center.  Reroll dough and use until all dough has been used up.
6.  Bake cookies for 12-15 minutes, until bottoms are very lightly golden brown around edges.
7.  Allow cookies to cool completely

To make the topping:
1. Preheat oven to 300.  Spread coconut evenly on a rimmed baking sheet lined with foil and toast for 20 minutes.  Stir every 5 minutes, until coconut is golden.  It might seem like that's a lot of coconut, but trust me on this.  You'll want it.  Watch the coconut carefully the last 8-5 minutes.  Let cool.
2. Unwrap caramels and microwave with milk and salt.  Cook on high 3-4 minutes, stopping to stir.  When smooth and melted, stir in toasted coconut.  And try not to eat it all, because it's very yummy.
3.  Spread topping on cooled cookies, using 1-3 tsp. per cookie. 
4.  After topping has set up, melt chocolate in a small bowl.  Transfer chocolate to piping bag or a large ziplock bag with the corner snipped off and drizzle chocolate onto cookies. 
*the original recipe says to dip cookies 1/2 way and THEN to drizzle, but my cookies were a bit too fragile for this to work.
**also the next time I make these, I think I will quickly dip the cookies into a thinner chocolate mixture before adding the topping, so it will stick to the cookie better.

Makes 3-4 1/2 dozen cookies--I personally got 41 from this batch.

Blueberry Coconut Macadamia Muffins

Goodness gracious, are these muffins delicious!  They're packed with lots of different flavors that blend very nicely into a moist, crunchy but yet soft, delicious muffin.  I found the recipe on EatingWell.com, through a google search looking for healthy but yet delicious brunch-type items.  I gave this recipe a try last night and on all accounts, it is a fabulous recipe.  I didn't have any problems with the batter, not baking time.  The only problem I had was waiting the suggested time after they came out of the oven.  I still burned my mouth a little because I couldn't wait, but it was definitely worth it!

Topping
1/4 c. unsweetened coconut
2 Tbl. flour
2 Tbl. brown sugar
2 Tbl. chopped macadamia nuts
1 Tbl. oil

Muffin
3/4 c. flour
1/2 c. brown sugar
3 Tbl. chopped macadamia nuts
1 Tbl. canola oil
1 c. whole-wheat flour
1 tsp. baking powder
1/4 tsp. baking soda
1/8 tsp. salt
1/2 tsp. cinnamon
1 large egg
1 large egg white
3/4 c. nonfat buttermilk
2 Tbl. butter, melted
1/2 tsp. coconut or vanilla extract
1 1/2 c. fresh or frozen (though not thawed) blueberries

1.  Preheat oven to 375 degrees.  Coat a 12-cup muffin pan with cooking spray.  I used baking liner cups and sprayed them with spray.
2.  Combine all topping ingredients and set aside.
3.  Mix together flours, baking soda, baking powder, salt and cinnamon in a medium bowl.
4.  Whisk brown sugar, oil, egg, egg white, buttermilk and extract in a (different) medium bowl until well combined.
5.  Make a well in the center of the dry ingredients and pour in the wet ingredients and stir until just combined.
6.  Add blueberries and remaining macadamia nuts, stir just to combine.
7.  Divide batter among the muffin cups (about 1/4 c. of batter per muffin).  Sprinkle and gently press the topping on the tops of the muffins (about 1 tsp. per muffin).
8.  Bake muffins about 20 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
9.  Let cool in the pan for 10 minutes, then remove from pan and let cool on a wire rack at least 5 minutes before serving.

Slow Cooker Thai Red Curry Chicken

We love curry, but don't have it often enough.  But I've found a few recipes to try for the next month or two.  This one was really good, and I'm sure we'll make it again.  The chicken thighs were so good and moist, and I loved the coconut milk with the red curry, yum!  It just needed some salt & pepper, and that's it.  We omitted the mushrooms, and personally, I'd like twice the amount of bamboo shoots, because they were awesome.  Delicious!

1/4 c. Thai red curry paste
2 - 2 1/2 lbs. chicken thigh fillets, trimmed & cut in slightly bigger than bite-sized pieces
1 c. chicken broth
2 tsp. oil
1 c. sliced bamboo shoots
1/2 c. fresh shiitake mushrooms, halved (we omitted them)
1 Tbl. brown sugar
1 tsp. fish sauce
1 (14 oz.) coconut milk (we used lite coconut milk)
1/3 c. basil leaves

1.  Heat some oil in a large frying pan on medium high heat.  Cut the chicken up and cook them in batches for 1 - 3 minutes, until sides turn golden.  Season with salt and pepper and transfer to slow cooker.
2.  Turn heat to low and add rest of cooking oil.  Add curry paste and stir for 2 - 3 minutes until it releases a sweet aroma.  Add the chicken broth and stir with the curry until it's all dissolved.  Add mushrooms and bamboo shoots, pour over chicken and stir until well mixed.
3.  Cook on high for 3 - 4 hours OR low for 7 - 8 hours.
4.  Combine coconut milk, fish sauce and brown sugar, stir into cooked mixture and cover.  Cook for 30 more minutes on high.
5.  Stir in basil and serve over rice.

Baked Coconut Chicken with Sweet & Spicy Apricot Sauce

I follow this cute blog, Six Sisters' Stuff and they have some good recipes that I've tried in the past few months.  And this one is another new recipe that we are fans of!  We really enjoyed it, the sauce was a great compliment to the chicken.  I decided on using an apricot-pineapple blend instead of just plain apricot, and it was fantastic. Next time I will cook the chicken at a lower temperature, because it didn't turn out as beautifully golden as I wanted; some of the coconut got a little burned.  I ended up not the full amount of the ingredients, so I'll copy what I used here.

Chicken
1 1/2 lb. chicken, cut into strips (about 25 pieces is what I got)
2 eggs
2-3 Tbl. flour
3/4 c. sweetened coconut flakes
3/4 c. panko bread crumbs
1 1/2 tsp. garlic powder
3/4 tsp. salt
3/4 tsp. curry powder
1/4 tsp. onion powder
1/8 tsp. cayenne pepper (optional, didn't use this time)

Sauce
1/2 c. apricot-pineapple (or just apricot) preserves
1 Tbl. unseasoned rice vinegar
3/4 tsp. red pepper flakes

1.  Preheat oven to 425 (original recipe says 450) degrees.  Line baking pan with foil, spray with nonstick spray.
2.  Combine coconut flakes, panko bread crumbs and spices in a medium-sized bowl.
3.  Place flour in one shallow bowl; beat the eggs and place in a different shallow bowl.
4.  Working with one chicken tender/piece, dip in flour, than egg & completely cover with coconut-panko mix.
5.  Once all pieces have been coated and placed on the baking pan, cook for about 15 - 20 minutes, until golden brown.
6.  Combine all the sauce ingredients, place in dipping bowls.

Chinese Sundaes / Hawaiian Haystacks

This is a family tradition. We often have it a few times a year, but the most memorable time is at the beach. My family has been going to the same motel, on the same beach, since my dad was a baby. It is one of my favorite places to be! My mom almost always makes this meal for the family, which has now grown to at least 30 of us. It's an ordeal, but it's tradition, too. Zak was wary of this, when I first talked about making it a few years ago. He was hesitant, but being the trusting guy in his woman's cooking that he is, ventured forth and came out a fan. Now every time I mention I'm making Chinese Sundaes, he gets all excited. They are that good. And we don't call them Hawaiian Haystacks, but I guess some people do, so whatever floats your boat. It's a simple meal to throw together, the only thing that takes time and a recipe is the chicken gravy, oh man. It's hard to not dump it all on your sundae because it's so good. Mmm. Well, I'll post the 'order' of the sundaes, as well as the chicken gravy recipe. Enjoy!

1. Rice
2. Chow Mein Noodles (crunchy)
3. Chicken (diced, cooked)
4. Chicken Gravy
5. Tomato (diced)
6. Celery (diced)
7. Cheese (grated)
8. Gravy again (optional, but if you're feeling indulgent, go for it)
9. Crushed Pineapple
10. Green Onion
11. Sliced Almonds
12. Coconut
13. Cherry

Chicken Gravy

6 Tbl. butter
6 Tbl. flour
1 1/2 c. chicken broth
1 c. milk
salt & pepper to taste

*our microwave is crazy powerful, so I usually cook the recipe starting around 50 or 60% power, working my way up and checking often, so it doesn't overflow*

1. Melt butter for about 1 1/2 minutes.
2. Once butter is melted, whisk in flour; cook for about 1 1/2 minutes, or until bubbly and thicker.
3. Add in liquids, slowly and whisking as you go. Once all the liquids have been added, microwave for 3 minutes.
4. Whisk, cook 2 minutes.
5. Whisk, cook 1 1/2 minutes.
6. Repeat until sauce is fairly thick, or until however thick you want it to be. Salt & pepper to taste.
(this recipe makes about 3 cups)

Basil Chicken in Coconut-Curry Sauce

I first made this in December, after looking through my Bridal edition of the Better Homes & Gardens cookbook. It looked delicious, and since I was craving some kind of coconut curry dish, decided to make it.  Zak and I have made it a few more times; we even made it for his family over the winter holidays. It's a little time-consuming but oh, so worth it. Below is our slightly altered version.

2 tsp. curry powder
1/2 tsp. cracked black pepper
1/4 tsp. chili powder
1/4 tsp. salt
4 skinless, boneless chicken breasts (I also kind of approximate the amount)
1 Tbl. olive oil
1/2 of a large red (or white) onion, diced
1 serrano pepper, seeded and finely chopped (the recipe originally calls for 2 jalapeƱo peppers, but we didn't want to use those)
5 cloves garlic, minced
1 13.5- or 14-oz. can unsweetened coconut milk
1 Tbl. cornstarch
5-6 Tbl. sugar
1/4 tsp. salt
3 Tbl. snipped fresh basil (about 4 leaves)
1 tsp. grated fresh ginger
rice to serve over (maybe 3 cups?)

1. In a medium bowl combine curry powder, black pepper, 1/4 tsp. salt, and chili powder. Cut chicken into 1-inch pieces. Add to spices, toss to coat. Cover and chill for 1 - 2 hours to allow spices to sink in.

2. Pour oil into large skillet or wok (we use our wok, which we love!); heat over medium-high heat. Add onion, pepper and garlic; cook and stir for about 8 minutes (until crisp-tender), then remove from wok. Add half of the chicken and cook for about 4 - 6 minutes (until no longer pink); remove from wok, repeat with remaining chicken.

3. Stir together coconut milk, sugar, cornstarch and 1/4 tsp. salt until smooth. Add to wok, carefully. Cook and stir until slightly thickened and bubbly. Return chicken and onion mixture to wok. Stir in basil and ginger. Cook and stir about 2 minutes, serve over hot rice. *We usually add rice to the wok to mix it all together, it is a good way to soak up the sauce.
