Crockpot Beef Stew

This recipe was pretty good, it smelled so good in the crockpot all day!  It was great with some thick slices of sourdough bread yum!

2 lb. stew beef
3 - 4 large potatoes, peeled & chopped
4 large carrots, peeled and cut into 1/2 inch pieces
1/4 c. flour
1/3 c. soy sauce
1 1/2 tsp. salt
1/2 tsp. pepper
1 tsp. paprika
1 large onion, sliced
1 can (8 oz.) tomato sauce
1 c. beef broth

1.  Layer potatoes on the bottom of the crockpot.  Add carrots and stew meat.
2.  Sprinkle meat with salt, pepper, paprika, flour and soy sauce.
3.  Layer onions on top of meat.
4.  Combine tomato sauce and beef broth and pour over meat and vegetables.
5. Cook on low for 7 - 8 hours (or on high for 4 - 5).

so thick and hearty!

Slow-Cooker Old-World Corned Beef & Vegetables

I used to not be a big corned beef fan.  But then I grew up and now look forward to having it every St. Patrick's Day!  I've only made it once before, our first married St. Patrick's Day, and don't remember what I did.  So I went on a little hunt for some good instructions and a recipe, especially because I invited our friends over, I wanted it to work out well.  I found this recipe and was a bit hesitant--it had me discard the seasoning packet!  But I thought it'd work out well for us, and looked easy enough.  Zak helped me with the veggies and everything, and after 8 long hours in the crockpot, we finally got to eat.  It was very, very good--we have just enough leftovers for one of us to eat.  I used 'Idaho gold' potatoes instead of red potatoes, some pearl onions and baby carrots.  It was so simple, and we have a bonus brisket, so I plan on making this again in a little bit!

2 lbs. golden/new/red? potatoes (8-10), quartered
2 c. baby carrots, halved
1 c. frozen small whole onions, thawed--I used about half a bag of white pearl onions and cut them in half
1 corned beef brisket, 3 - 3 1/2 lbs.
pepper
1/2 c. water
1 Tbl. Worcestershire sauce
1 Tbl. cornstarch
2 Tbl. cold water

1.  Mix potatoes, carrot and onions in a 4 - 6 quart slow cooker.
2.  Thoroughly rinse corned beef; discard seasoning packet.  Place beef on vegetables, sprinkle with pepper.
3.  Mix 1/2 c. water with Worcestershire sauce and pour over beef.
4.  Cover and cook on low for 8 - 9 hours, or until beef and vegetables are tender.
5.  Remove beef and vegetables from slow cooker; cover to keep warm.
6.  Pour juices into saucepan and heat to boiling.  Mix cornstarch and cold water until smooth; stir in.
7.  Cook, stirring constantly, until sauce has thickened.

Individual Chicken Pot Pies


I got this individual pie pan for my birthday and was super excited about it; Zak loves chicken pot pie and I could just imagine making cute little pot pies for him!  So this afternoon I went for it.  Overall, it went really well, except for my first set of pies.  I didn't realize that I needed to put the little metal plates on the bottom, because the box wasn't specific enough and....it went everywhere.  But I at least had the forethought to put the pan onto a baking sheet in case it leaked.  But the second pan of pies turned out just perfect!  So I'm jazzed about this pan and it's going to be awesome for summer fruit pies!  

The recipe I have for chicken pot pie is from my mother-in-law; I made it for Zak for the first time the night we got engaged.  I've made it a few times since then, but haven't really measured the amounts in the recipe.  Since I've been trying to be good about what I eat, I went hard core today and measured everything and wrote it all down, but now I have a recipe with actual amounts for the ingredients.  The only note is, when using the pie pan, I used 4 pie crusts; when I make just a pie in a pie plate, I only use 2 crusts.  Anyways, enough with the background and onto the recipe!

4 pie crusts (for individual pan, 2 for normal pie pan)
3 medium potatoes, peeled & cubed
2 medium carrots, peeled & cut in half-circles (about 3/4 c.)
1/2 onion (about 3/4 c.)
2/3 c. frozen peas
1 stalk celery, diced (1/3 c.)
1/4 tsp. thyme
1 tsp. garlic powder
2 boneless, skinless chicken breasts, cut into bite-sized cubes (came out to about 9 oz. cooked)
3 Tbl. flour
1/2 c. milk
1 c. shredded cheese
3 - 4 chicken bouillon cubes
3 - 4 c. water
salt & pepper

1.  Preheat oven to 375 degrees.
2.  Prepare all vegetables and place in a large stock pot.  Measure water--enough to cover the vegetables.  I usually end up with 3 cups.  Drop in corresponding number of bouillon cubes.
3.  Add thyme, garlic powder, and shakes of salt & pepper; cook on medium to medium-high until vegetables are tender.
4.  In another pot, boil water and add chicken; cook.
5.  Mix together milk and flour in small bowl, add to potato mix.  Cook until thick, more flour may be needed.
6.  Add cooked chicken and cheese, stir until cheese has melted.  
7.  Pour mix into pie crusts and place top layer on top, make sure to cut vents.
8.  Bake 20 minutes if using individual pie pans, or about 30 - 40 minutes if using normal pie plate -- until crust has started to turn golden brown.

Usually when I make it with a normal pie plate, there is leftover mixture.  It's good to eat plain, but I imagine it's great with biscuits or thick bread.  With the individual pan, I had plenty to make 10 little pies, hooray!

Hasselback Potatoes

I found this recipe on pinterest the other day and decided it would be an easy, awesome side to our Valentine's Day dinner of steak and green beans.  These potatoes are a Swedish version of a baked potato, and were pretty simple to make.  I was a bit nervous about cutting the slices, I didn't want to cut through the potato all the way.  But next time I will cut a little deeper, so it's easier to evenly distribute the spices, etc.  Anyways, these were tasty and a fun take on a basic dish.  And easy to eat!  I didn't really measure anything, just kind of did my own thing and they turned out fine.  But I'll list what I used, at least.

3 medium potatoes, cleaned
sea salt
fresh ground pepper
dried minced onion
dried minced garlic
1 Tbl. butter, melted
olive oil

1.  Scrub potatoes clean; preheat oven to 425 degrees.
2.  Place potato on cutting board, flat side down.  It helped to cut a small sliver out of the bottom, so it wouldn't wiggle or move.
3.  Start from one end of the potato and cut straight down, almost all the way through.
4.  Arrange potatoes in a baking dish and baste the melted butter over the potatoes; make sure to get in between the slices!
5.  Sprinkle salt, garlic, onion & grind pepper over potatoes.  Drizzle with olive oil before putting in the oven.
6.  Bake until potatoes are crispy and flesh is soft, about 40 minutes.

Crockpot Potato Soup

Zak found this recipe on Reddit.com.  I looked it over, and decided to give it a try.  The past few days we've been getting snow, so it seemed like a good winter soup, especially paired with some sour dough bread.  The original recipe was for a 6 qt. crockpot, and I ended up modifying the amounts for ours (which I think is a 4.5 or 5 qt.).  Well, my adjustments worked out perfectly, and the soup was delicious.  I opted to add light sour cream in lieu of the cream cheese and added a sensible amount of cheese.  The result was 13 cups of soup, and with 1 cup per serving with only 175 calories.  So, not bad at all.  Easy, tasty & not too bad for you?  Triple whammy!

3 lbs. potatoes, peeled & diced
6 c. chicken broth
1 1/2 c. cheese
1 c. light sour cream
1 c. corn
6 pieces bacon, crumbled
3 cloves garlic, minced
1 small onion (or 1/2 regular sized), minced
1/4 - 1/2 c. green onions
1 tsp. seasoned salt
1 tsp. pepper
salt to taste

1.  Peel & dice potatoes, layer on bottom of crockpot.
2.  Add in onion, garlic & sprinkle seasonings evenly.
3.  Pour in broth, cook on high for 4 hours (I ended up cutting that short by half an hour, didn't hurt it) or low for 8 hours; the potatoes should be 'fork tender'.
4.  Use an immersion blender to mash up potatoes until it reaches a thick, even consistency.
5.  Add in sour cream, bacon, corn, cheese and stir until melted.
6.  Add in green onions, stir and serve!

Makes 13 cups.

Ravioli Soup

I love this recipe.  I used to ask my mom for it all the time for my birthday.  It's perfect with grated parmesan cheese and a few slices of french bread, yum!  I made the entire recipe when we had friends over, and everyone loved it.

2 (10 oz.) cans Campbell's beef broth bouillon
2 c. canned tomato juice
6 c. water
1 1/2 c. chopped carrots (in half circles)
1/2 c. chopped green onion
1 1/2 c. peeled, diced potato (can use a little extra, I love the potato in this)
2 tsp. salt
2 tsp. sugar
1/2 tsp. pepper
1/2 c. chopped fresh parsley
1 (10 oz.) box frozen chopped spinach
about 48 - 60 frozen meat ravioli, cooked (for those in the Bay Area, my mom uses the local Genova brand)
2 (8 oz. each) containers of ravioli sauce (tomato, garlic, herbs)

1.  Combine bouillon, tomato juice and water in a large pot.
2.  Bring to a boil and add: carrot, potato, onion, parsley, salt, sugar and pepper. Cover and simmer until veggies are tender.
3.  Add the spinach and gently stir in the ravioli (which has already  been cooked) and the sauce.  Heat about 10 minutes.
4.  Serve with parmesan cheese sprinkled over top, if desired.

Cheesy Potato Bread [Bread Machine]

I made this on a whim, and it turned out pretty well! It's great with eggs or for a sandwich. I made the 1 1/2 pound loaf, but I suppose I'll include both...

for 1 1/2 pound loaf:
3/4 c. water
1/2 c. chopped, peeled potato
1/3 c. milk
1/3 c. shredded cheese
2 tsp. butter
3 c. bread flour
1 Tbl. sugar
3/4 tsp. onion salt
1/4 tsp. caraway seeds, crushed (optional, I didn't use them this time)
1 tsp. active dry yeast or bread machine yeast

for 2 pound loaf:
1 c. water
2/3 c. chopped, peeled potato
1/2 c. milk
1/2 c. shredded cheese
1 Tbl. butter
4 c. bread flour
4 tsp. sugar
1 tsp. onion salt
1/2 tsp. caraway seeds, crushed (optional)
1 1/4 tsp. active dry yeast, or bread machine yeast

1. Select desired loaf. In a small saucepan, combine the water and potato. Bring to boiling; reduce heat and simmer covered, about 10 minutes (or until tender) and do not drain.
2. Mash potato in the water, measure the mixture. If necessary, add water to equal 3/4 c. mixture for 1 1/2-pound loaf or 1 c. mixture for the 2-pound loaf; discard any excess mixture. Cool slightly.
3. Add the potato mixture and remaining ingredients to a bread machine according to the manufacturer's directions. Select the basic white bread cycle.
4. Remove hot bread from machine as soon as it's done and cool on a wire rack.

Baked Potato Soup

I first made baked potato soup for my dear friend Sarah's birthday in January. I didn't have the time to talk to my mom about it, because I knew there was a recipe she loved and I wanted to use it. So I found some recipe that was doable and it turned out very well. But this time, I wanted my mom's recipe, just so I could compare it with other ones I saw on-line. It turned out so well, it's very yummy and worth the time it takes to make.

4 large potatoes (2 3/4 lb.)
2/3 c. butter
2/3 c. flour
3/4 tsp. salt
1/4 tsp. pepper
6 c. milk
1 c. sour crean
1/4 c. green onions
10 strips of bacon, crumbled
1 c. shredded cheese
*optional garnishes:
-corn
-shredded carrot
-blanched broccoli

1. Bake potatoes at 350-degrees for an hour to and hour and fifteen minutes, or until soft.
2. While potatoes bake, cook bacon until dark and crispy (if it's chewy in the soup, it's a bit of a turn-off).
3. Cool potatoes completely once out of the oven, then peel and cube.
4. In a large pot, combine butter, flour, salt and pepper until smooth.
5. Add in milk; boil for 2 minutes, remove from heat.
6. Add in sour cream and potatoes.

*When I add in the sour cream and potatoes, I add in the other toppings such as green onion, bacon, cheese, corn. Since it's just the two of us, I figured why not get everything mixed up really well?

Delicious Mashed Potatoes

We used this recipe at Thanksgiving, it was wonderful! The secret is evaporated milk.

2 - 3 potatoes per person
1 12-oz. can evaporated milk (unsweetened)
4 Tbl. butter
salt and pepper

1. Boil salted water, add potatoes (small cubes cook faster and mash easier).
2. Drain when tender, usually 15 - 20 minutes.
3. Mash potatoes, add butter.
4. Add evaporated milk gradually, until desired consistency is reached (whole can may or may not be used).
5. Add salt and pepper to taste.

Chicken Nuggets & Fries

I found this recipe and thought it looked good and easy, and it was! I'm still working on perfecting the fries.

Chicken Nuggets
1/2 c. flour
2 chicken breasts, cut into 1-inch cubes
8-oz. bag of potato chips (we used Maui Onion, but I bet just a regular one will be fine too)
2 eggs, lightly beaten
3 Tbl. milk

1. Preheat oven to 400-degrees.
2. Dust chicken with flour.
3. Crush the chips in a plastic bag.
4. Whisk eggs and milk together.
5. Dunk chicken in egg-milk mixture, then add to bag.
6. Coat thoroughly.
7. Bake for 10 - 15 mins. on a baking sheet.

These are great with honey!

Fries
3 large baking potatoes
2 tsp. olive oil
1/2 tsp. garlic powder
1/2 tsp. seasoned salt
1/4 tsp. salt

1. Preheat oven to 400-degrees.
2. Peel potatoes, cut into 'fry' shape - about 1 1/2-in. strips.
3. Toss with spices and oil.
4. Spray baking sheet with oil (they will stick to the pan).
5. Arrange fries in a flat layer and back for 40 minutes until crisp on outside, tender inside.

'Golden' Potato Soup

This soup is very hearty and great paired with a thick bread.  It's also pretty simple and a favorite of ours.

2 Tbl. butter
1/2 c. onion
1/4 c. celery
1 medium carrot, shredded
3 large potatoes, peeled & diced (add salt to these)
1 1/2 c. water
2 c. milk
1/2 tsp. pepper
1 tsp. salt
2 Tbl. flour
2 Tbl. cornstarch
6 Tbl. water
1 - 1 1/2 c. shredded cheese (we usually have a bag with a pizza blend of three cheeses in the fridge)
paprika (for garnish)

1. Sauté butter, onion and celery.
2. Add carrot, 1 1/2 c. water, and potatoes; bring to a boil, reduce heat and cover until tender (about 20 - 25 minutes).
3. Stir in milk, pepper and salt, bring to a gentle boil, stir often.
4. Mix flour, cornstarch and water in a small bowl, then add to soup; stir until thick.
5. Add cheese, stir until completely melted.
6. Serve, with sprinkling of paprika for garnish.

*When I have green onions, I will add about 1/4 c. and sauté with the first three ingredients. I also use some as a garnish.
