Turkish Red Lentil Soup

My mother-in-law made this fabulous soup while we were in Connecticut, for the annual 'Bethlehem dinner' on Christmas Eve.  I fell in love with the delicious flavors of the soup and asked for the recipe when we returned back home.  She sent me the recipe (from Whole Foods Market) and the only variation I made was to use some chicken broth along with the vegetable broth; it turned out phenomenally well and I will be sure to keep this in rotation. It's very easy to make and is a good, flavorful, vegetarian soup that is enjoyable with warmed pita bread or by itself.

1 1/3 c. (about 8 oz.) red lentils, picked through & rinsed
7 c. vegetable broth (I used 4 c. vegetable broth, 3 c. chicken broth)
1 large onion, diced
1-2 large carrots, diced
4 cloves garlic, finely chopped
2 Tbl. tomato paste
1 tsp. cumin
1/8 - 1/4 tsp. cayenne pepper (or to taste)
3/4 tsp. salt (or to taste)

1.  In a large pot, combine lentils, broth, onion, carrot(s), garlic, tomato paste, cumin and cayenne.  Bring to a boil over high heat.  Lower heat and simmer, uncovered, until vegetables are very tender and lentils begin to fall apart (about 25 minutes).
2.  Remove pot from heat and use an immersion blender to blend the soup until it is creamy but not completely pureed.  Add salt and serve with warmed pitas.

Meatballs

The other day Zak asked if I'd make spaghetti & meatballs, which we haven't had in a long time.  I ended up using a Better Homes & Garden recipe for the meatballs, but changed it a little bit to what I thought would be good.  The meatballs turned out really yummy, I can't wait to have them again soon!

1 lb. ground beef
1/4 tsp. salt
1/4 tsp. oregano
1/4 tsp. pepper
1/2 tsp. garlic
1 egg
1/4 c. diced onion
3/4 c. normal breadcrumbs
sprinkles of parmesan cheese

1.  Dice onion.  Add to bowl with meat and spices.
2.  Beat egg, add with breadcrumbs.  Mix and add in cheese.
3.  Form into 1/2" (?) balls.  I got about 22 good sized meatballs from this recipe.
4.  Bake at 350 for 15-20 minutes.

Tater Tot Casserole

I didn't know tater tot casserole was a thing, but after this experiment, it might become a meal that we have every once in awhile, when we get that craving for a very yummy comfort food dish.  I used a bunch of different recipes and combined them to create this one.  I was only a little bit nervous about mostly winging it, but I took confidence in knowing what Zak and I both like and what would taste good and I'm proud to say that this was a big hit!  It was very easy to make and tasted great the next day, too!

1 lb. ground beef
1/4 c. onions, minced
1 tsp. minced garlic
1 tsp. pepper
1 tsp. salt
1/2 tsp. seasoned salt
1/2 tsp. onion powder
1/2 tsp. garlic powder
1 can cream of chicken soup
1 can cream of mushroom soup
1 lb. tater tots (around 50)
2/3 c. frozen peas
2/3 c. frozen corn
1 1/2 c. cheese

1.  Brown meat with onions.  Add spices.
2.  Add in soups and veggies, cook until warmed through.
3.  Defrost tots in a shallow bowl in the microwave for 1 - 2 minutes.
4.  Layer a 9"x13" casserole dish with half of the soup mixture, half of the tater tots, 1/2 c. cheese; repeat.  Sprinkle remaining cheese on top.
5.  Cook for about 25 minutes at 350 degrees.

Orange Teriyaki Chicken Kebabs

This was a fun recipe that we tried several weeks ago.  We had everything but the orange marmalade and I couldn't justify buying an entire container of marmalade that we don't even like for this recipe.  So I just added more orange juice and zest and whatever, it was fine.  Zak did an excellent job grilling these and it was a recipe that we will probably experiment with again in the future.

2 Tbl. olive oil
1 Tbl. fresh ginger, finely grated
1 Tbl. orange zest (I used a bit more)
1 garlic clove, minced
1/4 c. rice vinegar
3 Tbl. soy sauce
2 Tbl. sugar
2 Tbl. orange marmalade
1 Tbl. freshly squeezed orange juice (probably used about 3 Tbl.)
1 Tbl. honey
pinch of red pepper flakes
1 1/4 lb. boneless, skinless chicken, trimmed & cut into 1 inch cubes

1.  Over medium heat, add olive oil to small sauce pan.  Add ginger, orange zest and garlic.  Cook, stirring frequently for 1 - 2 minutes, or until fragant.
2.  Stir in the rice vinegar, soy sauce, sugar, marmalade, orange juice, honey and red pepper.  Bring to a simmer and continue cooking for 3 - 5 minutes, or until the sauce has thickened slightly.
3.  Make sure wooden skewers have soaked in cold water for about 20 minutes before threading chicken onto them.  Turn on grill.
4.  Thread chicken and grill, turning a quarter turn every few minutes.  Once they are mostly cooked, brush sauce on and cook until it caramelizes.  Zak used most of the sauce by the time they were done, so I guess just use your judgment and brush on sauce accordingly.

Lighter General Tso's Chicken

As you may have figured out, we love Chinese food.  And when I saw a recipe for not only General Tso's Chicken (a favorite of Zak's), but a healthier recipe from Martha Stewart, I knew I had to try it.  It was awesome!  The chicken was perfect, and although it was pretty spicy (but not as much the next day), it had such great flavor.  I loved how the chicken came out with the egg white and cornstarch batter, it was just great. Definitely a favorite and an addition to our meal menu.

1/4 c. cornstarch, divided (1 Tbl., 3 Tbl.)
1 lb. snow peas, trimmed (I used 1 lb. frozen sugar snap peas and trimmed them)
4 - 5 garlic cloves, minced
2 tsp. fresh ginger, minced
3 Tbl. brown sugar
2 Tbl. soy sauce
1/2 tsp. red pepper flakes (1/4 if you aren't a fan of spicy)
2 large egg whites
1 lb. chicken, cut into bite-sized pieces
1 - 2 Tbl. oil

1.  In large bowl, stir together 1 Tbl. cornstarch and 1/2 c. cold water until smooth.  Add snow (or sugar snap) peas, garlic, ginger, sugar, soy sauce and red pepper flakes.  Toss to combine and set aside.
2.  In a medium bowl, whisk together egg whites with remaining 3 Tbl. cornstarch, 1/2 tsp. salt and 1/4 tsp. pepper.  Add chicken and toss to coat.
3.  Heat oil over medium-high heat.  Shake off excess mixture from chicken and cook until golden, 6 - 8 minutes.  Transfer to a plate.
4.  Add snow pea mixture to skillet, cover and cook until tender and sauce has thickened, about 5 minutes.
5.  Return chicken to skillet and toss to coat.

Slow-Cooker Beef Gyros

This was a pretty good recipe.  And a bit different from our usual meals.  I was a bit nervous about this, because the meat hadn't thawed completely before I put it in the crock pot, and I didn't want to overcook it, but it turned out pretty darn perfect.  Zak was great and made the cucumber yogurt sauce and chopped the onions and tomatoes.  It was all ready when I came home for work and pretty tasty!  We have lots of leftovers!

Meat
2 lb. boneless chuck steak
1/4 c. olive oil
2 Tbl. lemon juice
1 Tbl. minced garlic
1 tsp. oregano
1/2 tsp. salt
1/4 tsp. pepper

Dill Cucumber Yogurt Sauce
1 c. plain Greek yogurt
1 c. diced seedless cucumber
1 Tbl. dill
1/4 tsp. salt

Pita bread
toppings: lettuce, tomatoes, red onions

1.  Place beef in crock pot.
2.  Mix rest of 'meat' ingredients in a small bowl and pour over beef, turning to coat.
3.  Cover and cook on low for 6 - 8 hours (until meat is tender, it was practically falling apart!)
4.  Mix sauce ingredients together, spread on pita bread.
5.  Top pitas with meat and toppings.

Fail-Proof Pizza Dough

We love making homemade pizza; we used to make it almost every week when we were engaged/dating/in Rexburg.  We don't make it as often now, but it's always fun.  We have almost always used Zak's mom's recipe (they have a Pizza Friday tradition since forever), which is awesome and we love.  But I saw this recipe online and thought I'd like to give it a try.  The gal talked about how the crust was chewier, thinner and like restaurant pizza, and the only major difference was using bread flour vs. regular flour.  Zak was in charge of the dough and when I came home for work, we made two pizzas: one just cheese, and one with pineapple, tomatoes and basil.  It was delicious.  I really liked this recipe, the crust was awesome!  Zak liked it too, but he naturally loves his mom's recipe.  So I think we'll use this one from time to time, depending on our stock of bread or regular flour.  

Crust
1 c. warm water
2 1/4 tsp. active dry yeast
1 Tbl. honey (or sugar)
2 tsp. salt
2 Tbl. olive or canola oil
3 c. bread flour

Sauce
6 oz. tomato sauce
6 oz. tomato paste
1/2 tsp. salt
1/2 tsp. sugar
1/2 tsp. oregano
1/2 tsp. basil
1/2 tsp. pepper
1/2 tsp. garlic
1/2 tsp. minced onion


~4 c. cheese
toppings

1.  In a large mixing bowl, stir together yeast and honey (or sugar) into warm water.  Let sit for 5 - 10 minutes or until bubbles form and mixture starts to foam.
2.  Pour in salt, oil and half the flour and mix on low.
3.  Once that flour is incorporated, start adding rest of flour slowly until dough is slightly tacky, but doesn't stick to hands when you touch it.
4.  Turn the mixer to medium - high to high speed, set a timer for 6 minutes and walk away.
5.  Lightly grease bowl and dough, cover with plastic wrap and let rise 1 - 2 hours.
6.  Once dough has doubled in size, punch down, separate into two pieces and roll into circle.  Preheat oven to 500 degrees.
7.  Mix sauce ingredients, adding other spices to taste.
8.  Add sauce, cheese and toppings to pizza.
9.  Cook pizza about 8 - 10 minutes, until crust has turned a beautiful golden brown color.

at first, I was skeptic of pineapple w/basil & tomatoes, but it was so yummy!

P.F. Chang's Mongolian Beef copycat recipe

Holy goodness, this recipe was great!  I couldn't get over how good the sauce was!  Not too salty or sweet, the ingredients blended together really nicely.  I used about 3/4 lb. of beef that was already packaged for stir-fry--just thin slices of beef.  I fear I overcooked them a little bit, but in the future it'll be fine.  I thought I had fresh garlic, but when I went looking for it, it had disappeared, so I used the same amount of dried garlic, and it was just fine.  I increased the amount of fresh ginger by 1/4 tsp. and didn't change much else to the recipe.  I think next time I might add some cornstarch dissolved in water to help thicken the sauce, because it didn't seem to thicken up ... at all.  That was our one disappointment.  But I poured the extra sauce over the rice and broccoli we had and no one complained.  All in all, a really good, tasty and fairly manageable recipe; I will be making this often in the future.

2 tsp. vegetable oil
1/2 fresh ginger, minced (I used 3/4 tsp.)
1 Tbl. garlic, chopped (dried worked just fine)
1/2 c. soy sauce
1/2 c. water
3/4 c. brown sugar
oil for frying
1 lb. flank steak, cut against the grain into 1/4" slices
1/4 c. cornstarch
2 large green onions (I used about 1/4 c.), chopped

1.  Heat 2 tsp. of oil in a medium saucepan over medium heat.  Don't let the oil get too hot.  Add ginger and garlic to the pain and saute for about 30 seconds.
2.  Quickly add the soy sauce and water, then dissolve brown sugar in sauce.  Increase heat a little and boil the sauce for 2 - 3 minutes until it has thickened.  (If needed, dissolve some cornstarch in cold water and add to sauce, to speed up process.)  Remove from heat.
3.  Dip cut steak pieces into cornstarch to apply a very thin dusting to each piece of beef.  Let it sit for about 10 minutes before frying.
4.  Heat up oil in wok or large skillet over medium heat.  Add beef and fry until brown.  Transfer meat to a plate with paper towel and dab excess oil off.
5.  Drain excess oil from pan and add in the sauce with the meat and add green onions.  Let sauce simmer until warm.

Slow Cooker Cashew Chicken

I made this recipe last night and it was a pretty simple recipe, and it smelled so good while it was cooking!  In the future, I think I'll add a little bit of salt to the chicken, because it needed just a touch.  But overall, a great recipe and will be rotated into our food menu.

2 lb. boneless, skinless chicken thigh or breast tenders (I used about 26 oz. and cut them up so there were 18 pieces)
1/4. flour
1/2 tsp. black pepper
1 Tbl. canola oil
1/4 c. soy sauce
2 Tbl. rice vinegar
2 Tbl. ketchup
1 Tbl. brown sugar
1 garlic clove, minced
1/2 tsp. fresh ginger, grated
1/4 tsp. red pepper flakes
1/2 c. cashews

1.  Combine flour and pepper in resealable ziplock bag.  Add chicken and shake to coat.
2.  Heat oil in skillet over medium-high heat.  Brown chicken pieces about 2 minutes on each side.  Place in slow cooker.
3.  Combine soy sauce, vinegar, ketchup, sugar, garlic, ginger & pepper flakes in a small bowl; pour oven chicken.
4.  Cook on low for 3 - 4 hours, turning chicken over once, after 2 hours.
5.  Add cashews and stir; serve over rice.

Crockpot Ravioli Casserole

I've been trying to find new and different recipes for the crockpot.  I found this one and thought it looked pretty good.  Zak actually did this whole recipe himself, since I had a busy day and couldn't make it home.  But it turned out really well, and smelled great when I got home.  I think next time we'll use less meat, 1 1/2 lbs. seemed like way too much.  And add a little bit more salt & pepper, but overall it was pretty good!

1 1/2 lbs. lean ground beef (I'm planning on using 1 lb. next time)
1 onion, chopped
1 garlic clove, minced
1 (15 oz.) can tomato sauce
1 can stewed tomatoes
1 tsp. oregano
1 tsp. Italian seasoning
salt & pepper
10 oz. frozen spinach, thawed
16 oz. bowtie pasta, cooked
1/2 c. shredded Parmesan cheese
1 1/2 c. mozzarella cheese

1.  Brown ground beef with onion, garlic and salt & pepper.
2.  Put in crockpot and add sauce, tomatoes & seasonings.  Cook for 6 - 7 hours on low OR 4 - 5 hours on high.
3.  Add spinach, pasta and cheese during the last 30 minutes of cooking and turn temperature to high.  Make 6 - 8 servings, depending on your serving size.

Orange Chicken

We haven't had orange chicken in a long time, and I wasn't completely crazy about the recipe I used last time.  So I decided to give my mom's recipe a try and it was a hit--so delicious!  The perfect amount of spicy and sweet orange, and the crispy chicken, oh it was just what we wanted.  Perfect over white rice and with broccoli on the side.

Chicken
2 lbs. chicken, cut into bite-sized pieces
1 egg
1 1/2 tsp. salt
pinch of pepper
1/2 c. cornstarch
1/4 c. flour
1 Tbl. oil
1 tsp. garlic, minced (I used dried and it worked fine, next time I'll try it with fresh garlic)
1 Tbl. fresh ginger, minced
1/4 c. green onions, chopped
1/4 - 1/2 tsp. red pepper flakes
1 Tbl. rice vinegar
1/4 c. water
1 Tbl. cornstarch
zest of an orange

"Orange" Sauce
3 Tbl. soy sauce
3 Tbl. water
1/2 c. sugar
1/2 c. white vinegar
1/2 Tbl. sesame oil

1.  In a medium bowl, mix together the egg, salt, pepper and oil.  Mix well.  Stir in the chicken pieces.
2.  In a large bowl, stir together flour and 1/2 c. cornstarch.  Add the chicken pieces, stirring to coat.  Heat 1 Tbl. oil for deep frying in a wok or deep fryer to 375 degrees/medium-high.
3.  Add the chicken in small batches, fry for 4 - 5 minutes, until golden crisp.  When done with each batch, drain chicken on paper towels.
4.  Add ginger and garlic to wok and stir fry until fragrant, about 10 seconds.  Add red pepper flakes and green onions, then rice vinegar and stir.
5.  Add the "orange" sauce and bring to a boil.
6.  Stir the 1 Tbl. cornstarch into the 1/4 c. water and add to sauce and heat until sauce has thickened.  Add the cooked chicken, stirring until well incorporated.
7.  Turn off the heat and stir in the orange zest.

Kung-Pao Chicken

I found this recipe on a cute blog, called Six Sisters' Stuff, and decided it would be worth a try.  It's entitled '500 Calorie Kung Pao Chickn' and thought it'd be fitting because we are trying to watch our caloric intake AND we love Chinese food.  But Chinese food isn't known to be super healthy!  So anyways, I made this is and it's delicious.  The chicken's so tender and I love the bites with cashews in it.  I decided to sub in cashews for the peanuts the original recipe called for, mostly because we love cashews more and also because we didn't have peanuts.  I used a package of frozen vegetables called "Asian Medley", that had carrots, broccoli, snap peas and baby corn in place of the snow peas.  I think I'll use a little bit more next time, because they were so good in it!  Also, the sauce was pretty hot with just 1/2 tsp. of the red pepper flakes, so I am sure I'll go a little easier on those next time.  But this recipe is awesome and I am so so so happy with it!

2 Tbl. dark sesame oil (I used toasted sesame oil and it was just fine; the original recipe subbed olive oil)
1 c. chopped onion
3 garlic cloves, minced
1 lb. boneless, skinless chicken breasts
3/4 c. water
3 Tbl. low sodium soy sauce
2 tsp. cornstarch
1 tsp. brown sugar
1/4 - 1/2 tsp. red pepper flakes
1 c. vegetable medley/snow peas/sugar snap peas
2 Tbl. chopped unsalted, dry-roasted cashews/peanuts

1.  Heat oil in a large skillet over medium-high heat.  Add onion to pan, saute for 3 minutes or until tender.
2.  Add garlic and saute 30 seconds, stirring constantly.  Add chicken, saute 3 minutes or until no longer pink in the middle.
3.  Combine water, soy sauce, cornstarch, brown sugar & red pepper flakes and stir until sugar dissolves.  Add to pan and bring to a boil.
4.  Add vegetables and cook for 2 minutes or until veggies are crisp-tender and sauce has thickened.  Sprinkle with nuts.

Perfect with 1/2 - 3/4 c. rice in a bowl.  It makes 4 servings, at 250 calories per serving (excluding rice).

Hasselback Potatoes

I found this recipe on pinterest the other day and decided it would be an easy, awesome side to our Valentine's Day dinner of steak and green beans.  These potatoes are a Swedish version of a baked potato, and were pretty simple to make.  I was a bit nervous about cutting the slices, I didn't want to cut through the potato all the way.  But next time I will cut a little deeper, so it's easier to evenly distribute the spices, etc.  Anyways, these were tasty and a fun take on a basic dish.  And easy to eat!  I didn't really measure anything, just kind of did my own thing and they turned out fine.  But I'll list what I used, at least.

3 medium potatoes, cleaned
sea salt
fresh ground pepper
dried minced onion
dried minced garlic
1 Tbl. butter, melted
olive oil

1.  Scrub potatoes clean; preheat oven to 425 degrees.
2.  Place potato on cutting board, flat side down.  It helped to cut a small sliver out of the bottom, so it wouldn't wiggle or move.
3.  Start from one end of the potato and cut straight down, almost all the way through.
4.  Arrange potatoes in a baking dish and baste the melted butter over the potatoes; make sure to get in between the slices!
5.  Sprinkle salt, garlic, onion & grind pepper over potatoes.  Drizzle with olive oil before putting in the oven.
6.  Bake until potatoes are crispy and flesh is soft, about 40 minutes.

Sweet Garlic Chicken

I saw this recipe on-line while trying to find a simple meal.  Well, this was incredibly simple and delicious.  We both really liked it, and I'm sure it'll get worked into our rotation.  The garlic matched well with the brown sugar to create a surprisingly delicious flavor.  Perfect with mashed potatoes and a vegetable side dish!  I added minced dried onion and changed the baking time and temperature

4 boneless, skinless chicken breasts
4 garlic cloves, minced
about 1/2 Tbl. minced, dried onion
3 tsp. olive oil
4 Tbl. brown sugar

1.  Preheat oven to 350 degrees.  Line a baking dish with foil.
2.  Saute garlic and minced, dried onion in olive oil until fragrant and tender.
3.  Remove from heat and stir in brown sugar.
4.  Pat mixture evenly onto chicken.
5.  Cook about 20 minutes, until center has reached 170 degrees and is cooked.

Crockpot White Chicken Chili

I know, I've been on a crockpot kick lately.  But I'm determined to use it and find recipes that we like and aren't all cream-based soups.  Zak really likes white chicken chili and we've had it once or twice in the past, and I decided to give this recipe from the Better Homes & Gardens cookbook a try.  I changed some of the amounts of the ingredients, and omitted the chili peppers and subbed in some red pepper flakes.  I guess I'll just write down what the book has and in parentheses write what I used today.  Today is going to be rough, smelling it all day, waiting for Zak to come home from work to enjoy it!  I'm planning on serving it with some cheese, broken tortilla chips and a dollop of sour cream on top.

3  15.oz cans white kidney beans (I used 2)
2 1/2 c. chopped cooked chicken (20 oz. before cooking, about 14 oz. after)
1 c. chopped onion -- 1 large
1 1/2 c. chopped red, green and/or yellow sweet pepper (1 yellow & 1 red)
2 jalapeno chili peppers, seeded & chopped (didn't use, subbed in about 1/2 tsp. red pepper flakes)
2 gloves garlic, minced (4 cloves/5g)
1/2 tsp. salt
2 tsp. ground cumin
1/2 tsp. oregano
3 1/2 c. chicken broth (used Pacific Organic Low Sodium broth)

1.  Cook chicken, prep vegetables.
2.  In a 3 1/2 - 4 qt. crock broth, stir together all ingredients, except broth.
3.  Stir in chicken broth.
4.  Cook on LOW for 8 - 10 hours or HIGH for 4 - 5 hours.  Serve w/cheese, tortilla strips, etc. if desired.

100th post: Slow-Cooker Honey Sesame Chicken


Whoo hoo, 100 posts!

This recipe is a simple and tasty recipe I tried Friday night.  I changed the amount of honey to about 3/4 of a cup but added some brown sugar instead.  Overall, it was a pretty good meal, the sauce was good.  Our only major note was that the chicken ended up a little dry inside and that it was more shredded than we'd like.  So maybe next time I'll cut up the chicken breasts a bit before adding them into the crock pot.  But, it's a keeper and was so easy and went well with rice and broccoli!

4 boneless, skinless chicken breasts or thighs
salt & pepper
1 c. honey (I used 3/4 c. + about 4 Tbl. brown sugar instead)
1/2 c. soy sauce
1/2 c. diced onion (I used 2 Tbl. minced, dried onion instead)
1/4 c. ketchup
2 Tbl. vegetable oil
2 cloves garlic, minced (I used 1 tsp. dried, minced onion)
1/4 tsp. red pepper flakes
4 tsp. cornstarch dissolved in 6 Tbl. water
sesame seeds

1.  Season both sides of chicken lightly with salt & pepper (I just did one side), put into crock pot.
2.  In small bowl, combine honey (& brown sugar), soy sauce, onion, ketchup, oil, garlic & pepper flakes.  Pour over chicken.
3.  Cook on low for 3 - 4 hours or on high 1 1/2 - 2 1/2 hours, or just until chicken is cooked through.  I had Zak turned the chicken over about halfway through.
4.  Remove chicken from crock pot, leave sauce.  Dissolve cornstarch in water and pour in; stir to combine with sauce.
5.  Replace lid and cook sauce on high for ten more minutes, or until slightly thickened.  Meanwhile, cut chicken into bite sized pieces.
6.  Return chicken to pot once sauce has thickened, and toss before serving.  Sprinkle with sesame seeds.

Garlic Cheese Bread

The other day I saw this recipe and not only did I immediately salivate, but decided I had to try it.  Yesterday we had our friends over and I made it with spaghetti; it was a hit!  I was surprised at how simple the recipe was, and how good.  I used half of the amount of cheese (about 2.5 oz.) and made my own garlic butter, but only used about 3/4 of the stick, not the whole thing.  But anyways, it was delicious and I'm sure I'll make it again.  Yum!

Bread
1 c. warm water
1 Tbl. honey
1 envelope active dry yeast (2 1/4 tsp.)
1 tsp. salt
3 c. bread flour
1/3 lbs. any cheese (I used 2.5 oz. of just regular block cheese)
1/2 c. garlic butter (I used 3/4 of a stick of butter)

Garlic Butter (I made this up, so add garlic and salt to taste)
1/2 c. (1 stick) butter
3 cloves garlic, minced
1/4 tsp. garlic salt

1.  In a large bowl, stir water, honey & yeast together.  Let yeast proof 5 - 10 minutes, until bubbly and active.
2.  If using a stand mixer, do not set speed higher than a 2 or 'stir'; stir in salt and flour in 1/4 c. increments.
3.  Once dough starts pulling away from the sides of the bowl, set a timer for 5 minutes and let machine knead the dough.  Dough should be smooth and tacky, but when touched, shouldn't leave any dough on fingers.
4.  Grease the bowl and dough.  Cover with plastic wrap or a towel and let rise 1 hour in a warm area or until doubled in size.
5.  Punch down dough and cut into two equal portions.  Form into two long baguettes the length of the cookie sheet.  I twisted them so they looked neat, but I guess it also helps it keep the length and not shrink.  Cover with plastic wrap and rise 30 minutes.
6.  Preheat oven to 350 degrees.  Once bread has risen and oven is heated, bake
for 15 - 20 minutes, until lightly golden.
7.  While bread is baking, slice the cheese into thin slices and melt the garlic butter.  Pull loaves out of the oven and brush with melted garlic butter (I put some foil under the bread so it wouldn't get all over the pan.
8.  Bake another 5 - 7 minutes, or until bread is a nice golden brown.  Remove from oven and cool 15 minutes.)
9.  Cut 1-inch slices three-quarters of the way through the loaves.  Brush garlic butter in between each slice and fill each with a slice of cheese.  Bake another 3 - 5 minutes or until cheese is completely melted.  Serve immediately!

Slow Cooker San Francisco Pork Chops

I found this recipe on Pinterest, and got a craving for pork chops.  I'm still not 100% confident with using pork in recipes, or my slow cooker, but this recipe looked right up my alley.  I've used my slow cooker a bit more in the last few months, and am starting to love it.  I didn't know they were so many types of recipes you could make with one!  Anyways, this looked delicious, so I thought I'd give it a shot.  It turned out fairly salty, so I'd recommend lightly seasoning the pork chops and using low-sodium broth and soy sauce.

4 pork chops, about 1-inch thick [it apparently doesn't matter if you use boneless or bone-in chops]
2 Tbl. olive oil
salt & pepper for seasoning
2 cloves garlic, finely minced
1/4 c. soy sauce
1/4 c. chicken broth
2 Tbl. packed light brown sugar
1/4 tsp. red pepper flakes
1 Tbl. cornstarch
1 Tbl. cold water

1.  In a large 12-inch skillet, heat oil over medium-high heat until simmering and hot.  Lightly season the pork chops on both sides with salt & pepper.  Brown the chops for 1 - 2 minutes on each side until golden.  Transfer to slow cooker.
2.  Turn heat down to medium and add the garlic to the drippings in the skillet and stir constantly until garlic is aromatic and golden (but not burned!).  Stir in the soy sauce, broth, brown sugar & red pepper flakes.  Cook and stir until sugar is dissolved.  Pour over chops.
3.  Cover the slow cooker and cook on low for 7 - 8 hours until meat is tender.  If using bone-in pork chops, fish out the bones.  Remove the chops from the slow cooker to a shallow pan or plate - they will most likely be falling apart in tenderness at this point.
4.  In a small bowl, combine the cornstarch and cold water until smooth.  Whisk the mixture into the sauce in the slow cooker.  Return the chops and cook on high for 30 - 60 minutes longer, until sauce is slightly thickened [if you want a very thick sauce, once you've removed the chops from the cooker, pour the sauce into a pan and place it over medium heat on the stove.  Add in cornstarch mixture and bring sauce to boil; boil for 1 - 2 minutes, until thick.  Add pork and heat through.].
5.  Serve chops over rice or mashed potatoes.

Crockpot Potato Soup

Zak found this recipe on Reddit.com.  I looked it over, and decided to give it a try.  The past few days we've been getting snow, so it seemed like a good winter soup, especially paired with some sour dough bread.  The original recipe was for a 6 qt. crockpot, and I ended up modifying the amounts for ours (which I think is a 4.5 or 5 qt.).  Well, my adjustments worked out perfectly, and the soup was delicious.  I opted to add light sour cream in lieu of the cream cheese and added a sensible amount of cheese.  The result was 13 cups of soup, and with 1 cup per serving with only 175 calories.  So, not bad at all.  Easy, tasty & not too bad for you?  Triple whammy!

3 lbs. potatoes, peeled & diced
6 c. chicken broth
1 1/2 c. cheese
1 c. light sour cream
1 c. corn
6 pieces bacon, crumbled
3 cloves garlic, minced
1 small onion (or 1/2 regular sized), minced
1/4 - 1/2 c. green onions
1 tsp. seasoned salt
1 tsp. pepper
salt to taste

1.  Peel & dice potatoes, layer on bottom of crockpot.
2.  Add in onion, garlic & sprinkle seasonings evenly.
3.  Pour in broth, cook on high for 4 hours (I ended up cutting that short by half an hour, didn't hurt it) or low for 8 hours; the potatoes should be 'fork tender'.
4.  Use an immersion blender to mash up potatoes until it reaches a thick, even consistency.
5.  Add in sour cream, bacon, corn, cheese and stir until melted.
6.  Add in green onions, stir and serve!

Makes 13 cups.

Zucchini Monterey

This is a family favorite, and one of my personal favorites.  I made it for Zak's birthday with the pork recipe I just posted.  Zak isn't a huge fan of zucchini, so I figured this would be a decent way to maybe get him to like it.  He didn't love or hate it, but he is a little bit more open to the idea now!  This is a great side dish and pretty simple to make, once you get it through your head that it's not too difficult.  


I made 4 zucchini and kind of eye-balled the ingredients.  The most important things are: cooking the zucchini long enough so that it's not crunchy or too soft, and, while you're cooking the vegetables, add in salt and pepper until it tastes good.  But here is the recipe, enjoy!  


6 zucchini
3 Tbl. butter
1 clove garlic, minced
1/4 c. chopped green onion
(1/4 c. white onion, optional)
salt & pepper
3/4 - 1 c. monterey jack cheese


1.  Cut a V down each zucchini, roughly a quarter of it.  Chop up.
2.  Boil rest of zucchini about 5 minutes, until they're not crunchy, but not falling apart.  They'll turn a little opaque in color.
3.  Meanwhile, sauté in butter: zucchini, green onion, garlic and, if wanted, white onion.  Season to taste.
4.  Drain zucchini, and scoop out a channel in each; add the pulp to the sautéed mixture.  
5.  Stir in 1/2 c. - 3/4 c. cheese -- however much you want.
6.  Spoon into zucchini shells, place in baking dish and sprinkle with remaining cheese.
7.  Bake covered (or uncovered, until cheese is slightly browned) at 375 degrees about 20 minutes.
