Taco Salad

We have taco salad often because it's easy, really yummy and lasts us for a few days, which is always great. My family has a great thousand island dressing that I posted on the blog and it goes great with this taco salad!  This last time I made it, I used a homemade taco seasoning mix, which turned out really well, definitely a keeper.  Here is what we have for taco salad:

1 lb. lean ground beef, browned with salt & pepper (also with 1 chopped onion, if desired)
3 tsp. taco seasoning mix or 1 package mix
1 can kidney beans
1 can sliced olives
1-2 heads iceberg lettuce, washed & torn
4-5 tomatoes, chopped
1 avocado, chopped
1 can corn
1-2 bags tortilla chips
grated cheese
sour cream
salsa
thousand island dressing

Tater Tot Casserole

I didn't know tater tot casserole was a thing, but after this experiment, it might become a meal that we have every once in awhile, when we get that craving for a very yummy comfort food dish.  I used a bunch of different recipes and combined them to create this one.  I was only a little bit nervous about mostly winging it, but I took confidence in knowing what Zak and I both like and what would taste good and I'm proud to say that this was a big hit!  It was very easy to make and tasted great the next day, too!

1 lb. ground beef
1/4 c. onions, minced
1 tsp. minced garlic
1 tsp. pepper
1 tsp. salt
1/2 tsp. seasoned salt
1/2 tsp. onion powder
1/2 tsp. garlic powder
1 can cream of chicken soup
1 can cream of mushroom soup
1 lb. tater tots (around 50)
2/3 c. frozen peas
2/3 c. frozen corn
1 1/2 c. cheese

1.  Brown meat with onions.  Add spices.
2.  Add in soups and veggies, cook until warmed through.
3.  Defrost tots in a shallow bowl in the microwave for 1 - 2 minutes.
4.  Layer a 9"x13" casserole dish with half of the soup mixture, half of the tater tots, 1/2 c. cheese; repeat.  Sprinkle remaining cheese on top.
5.  Cook for about 25 minutes at 350 degrees.

Sweet Corn Tamale Cakes [Cheesecake Factory]

Oh my goodness I love this dish.  It's from the Cheesecake Factory and is my favorite appetizer of all-time.  Normally, I wouldn't go for all these different salsas and flavors, but combined, they are amazing.  I love the corn cakes the most.  My mom made these for us when we were in California, and they were better than the restaurant's!  I've had my eye on this recipe before, but never made it because I was unsure of how it'd go, especially without a food processor.  But I talked to my mom about it, and she convinced me I could handle it.  It's a bit more of an involved recipe, but well worth it.  My cakes turned out a little crispy and not totally one solid piece, but they still tasted delicious.  I made five cakes in all, even though it's supposed to make 4. Whatever, we were happy to have a bonus one!  They kept find in the fridge overnight, so today the leftovers were still wonderful.  Zak said I should make mini ones to serve with these; he loves them that much!  Another recipe success!

Salsa Verde
2 tomatillos, with paper removed and chopped
4 oz. mild green chilies
1 green onion bunch, chopped
2 Tbl. fresh cilantro
1 1/4 tsp. sugar
1/4 tsp. ground cumin
1/4 tsp. salt
pinch of pepper

Tomato Salsa
1 medium tomato, diced
1 Tbl. Spanish onion, minced (I used red onion)
1 Tbl. fresh cilantro
1/2 - 1/4 tsp. lime juice
1/2 small jalapeno, minced
dash of salt & pepper

After I lightly blended the ingredients


Southwestern Sauce
1/2 c. mayo
1 tsp. white vinegar
1 tsp. water
3/4 tsp. sugar
1/2 tsp. chili powder
1/4 tsp. paprika
1/8 tsp. cayenne pepper
1/8 tsp. onion powder
dashes of: salt, pepper & garlic powder

Seriously, using a squirt bottle helped big time

Tamale Cakes
1 1/2 c. frozen corn (keep 1/2 c. whole & separate)
1/2 c. butter, softened
3 Tbl. sugar
1/8 tsp. salt
1/2 c. masa harina (corn flour)
2 Tbl. white flour

Garnish
1/4 c. sour cream (4 Tbl.)
1/2 - 1 avocado, chopped
2 Tbl. fresh cilantro, chopped (I didn't use)

1.  Prepare the salsa verde by combining all ingredients in a food processor or use a hand blender.  Cover and chill.
2.  Prepare tomato salsa by combining all ingreidents in a small bowl.  I used my hand blender briefly to slightly mix the ingredients into a mushier? state.  I wanted it to be a bit more spreadable and in smaller pieces, if that makes sense.
3.  Prepare southwestern sauce by combining all ingredients in a small bowl.  Transfer to a squirt bottle, as it will make life much easier when assembling!  Chill.
4.  Preheat oven to 400 degrees.
5.  For the tamale cakes, coarsely puree 1 c. of the corn in a food processor.  Using a hand blender was kind of a disaster, and took awhile.  Next time I plan on using a blender, if I don't have a food processor before then.
6.  Once pureed, combine with softened butter, sugar and salt.  Blend well with electric mixer until smooth.
7.  Add masa and white flour and blend well.
8.  Mix in the remaining 1/2 c. of corn by hand.
9.  Measure 1/2 c. and form into 3-inch patties.  Using slightly wet hands helped a lot to form the patties.  I got 5 patties out of the mixture.
10.  Arrange on a baking sheet and bake 20 - 25 minutes, or until cakes are browned on the bottom.
11. Flip cakes with a spatula and bake for an additional 5 - 7 minutes or until slightly browned.
12.  To serve, spoon the salsa verde onto a platter.  Coat entire plate with about 1/4 inch of salsa.
13.  Arrange tamale cakes on top of the salsa verde.
14.  Add spoonful of tomato salsa on top of each cake, with a dollop of sour cream on top.
15.  Arrange avocado pieces on cake and drizzle both ways with southwestern sauce.

Crockpot Potato Soup

Zak found this recipe on Reddit.com.  I looked it over, and decided to give it a try.  The past few days we've been getting snow, so it seemed like a good winter soup, especially paired with some sour dough bread.  The original recipe was for a 6 qt. crockpot, and I ended up modifying the amounts for ours (which I think is a 4.5 or 5 qt.).  Well, my adjustments worked out perfectly, and the soup was delicious.  I opted to add light sour cream in lieu of the cream cheese and added a sensible amount of cheese.  The result was 13 cups of soup, and with 1 cup per serving with only 175 calories.  So, not bad at all.  Easy, tasty & not too bad for you?  Triple whammy!

3 lbs. potatoes, peeled & diced
6 c. chicken broth
1 1/2 c. cheese
1 c. light sour cream
1 c. corn
6 pieces bacon, crumbled
3 cloves garlic, minced
1 small onion (or 1/2 regular sized), minced
1/4 - 1/2 c. green onions
1 tsp. seasoned salt
1 tsp. pepper
salt to taste

1.  Peel & dice potatoes, layer on bottom of crockpot.
2.  Add in onion, garlic & sprinkle seasonings evenly.
3.  Pour in broth, cook on high for 4 hours (I ended up cutting that short by half an hour, didn't hurt it) or low for 8 hours; the potatoes should be 'fork tender'.
4.  Use an immersion blender to mash up potatoes until it reaches a thick, even consistency.
5.  Add in sour cream, bacon, corn, cheese and stir until melted.
6.  Add in green onions, stir and serve!

Makes 13 cups.

Stuffed Chicken Quesadillas

This week, as Zak & I were trying to decide what to make for dinner, ideas slowly formed in my head about this dish we made. I wanted something more than a cheese quesadilla, but wasn't thrilled about adding just peppers without chicken, etc. Once I realized we had enough ingredients to make 'fancy' quesadillas, I just went for it. And it was really good, with the exception of one thing: the really REALLY hot little pepper Zak cut up to add in. But overall, it was a success and we'll probably make these again this week!

I just thawed some chicken from the freezer, heated up a little butter and cooked the chicken (cut up, obviously) with some salt, pepper, a touch of minced garlic, and some chili powder. It turned out to be the perfect amount of spice!


While I was cooking the chicken, Zak diced red and green peppers, onion and a small little pepper we had (big mistake, it was beyond hot). I cooked those with a little bit of butter until they were tender.


Next, I heated up the tortilla, and added cheese. After a minute or two, I added some chicken and the veggies and let it cook evenly on both sides.


Then I transferred the quesadilla to the plate and added sour cream ('Mexican' kind, by Darigold--it has a bit more salt than normal sour cream--we really like it), corn and diced tomatoes on top.


I'm still really proud of this dish, because I am not one to just 'go with it' and make up recipes. But this was simple and fun enough, that I think I can handle it. We had a box of Spanish rice mix that I made to go along with, which was great. Next time, I might add the rice to the quesadilla when I add the cheese.

But in case you were wondering about the amounts, I'll list them below. This made three stuffed quesadillas, plus some extra veggies.

-one large chicken breast, cut into small cubes, tossed with a shake or two of: salt; pepper; minced garlic & chili powder
-half of a red pepper, diced
-half of a green pepper, diced
-half of an onion, diced
-half of a tomato, diced
-1/3 can of corn
-3 medium sized flour tortillas

Baked Potato Soup

I first made baked potato soup for my dear friend Sarah's birthday in January. I didn't have the time to talk to my mom about it, because I knew there was a recipe she loved and I wanted to use it. So I found some recipe that was doable and it turned out very well. But this time, I wanted my mom's recipe, just so I could compare it with other ones I saw on-line. It turned out so well, it's very yummy and worth the time it takes to make.

4 large potatoes (2 3/4 lb.)
2/3 c. butter
2/3 c. flour
3/4 tsp. salt
1/4 tsp. pepper
6 c. milk
1 c. sour crean
1/4 c. green onions
10 strips of bacon, crumbled
1 c. shredded cheese
*optional garnishes:
-corn
-shredded carrot
-blanched broccoli

1. Bake potatoes at 350-degrees for an hour to and hour and fifteen minutes, or until soft.
2. While potatoes bake, cook bacon until dark and crispy (if it's chewy in the soup, it's a bit of a turn-off).
3. Cool potatoes completely once out of the oven, then peel and cube.
4. In a large pot, combine butter, flour, salt and pepper until smooth.
5. Add in milk; boil for 2 minutes, remove from heat.
6. Add in sour cream and potatoes.

*When I add in the sour cream and potatoes, I add in the other toppings such as green onion, bacon, cheese, corn. Since it's just the two of us, I figured why not get everything mixed up really well?
